Using Up Food While Preparing Meals

Whenever possible, we prepare some of our meals in a way that allows us to use them for more than one day. 

For example, when we bake potatoes, we often bake extra potatoes to be used the next day. They can be reused in a variety of different ways.  

We might use those potatoes as part of a breakfast skillet the next day. Or, we might use them in a soup or a casserole dish. We might just chop them up and toss them with scrambled eggs or use them in a taco or burrito filling. Baked potatoes are really versatile that way.

Oftentimes when making side dishes we'll consider how we can reuse the item later. It's easy enough to cook  a little extra now  to have on hand when we want to use the item later in the week. 

Both grilled chicken and rice are good examples. The other day I made grilled chicken fajitas for dinner, I served it with buttered rice on the side. 

The next day I was able to take both the leftover chicken, rice, and onions from the meal the night before and turn it all into fried rice. 

All I had to do was add some seasoning, broccoli, a couple of eggs, and some soy sauce. It was an easy way to use up the leftovers, everyone enjoyed the meal and we avoided food waste, which saves us money.

  2. Love this, and we do something similar. I almost always double up my menu, so that we cook Friday-Sunday, and then do leftovers the rest of the week. Sometimes I transform the dishes a bit, and other times, we eat them the same way. I do try to mix up the sides, where possible, to reduce boredom.

    1. Thank you. I love that you cook enough on the weekend to have meals all week. That helps out so much. Mixing up the sides to avoid boredom is a good idea. :)

  3. I cooked 14 chicken tenders in the crockpot, and we have been eating from those. I figure 7 meals for the 2 of us, so 14 meals. I season them differently each time. Now, I have three more similar packages of chicken tenders to cook.

    Tommy cleaned seven (I think) ears of corn and broke them in half for me. I cook 1 piece for me and 2 for him each night.

    I am freezing all I can to have enough meat to last. We do not open something new or buy anything new as long as their is food in the refrigerator to eat.

    1. That is so great to cook your chicken tenders all at once and have them ready to go for meals. That's a great idea to split the corn into halves like that. I like the smaller ears anyway. We do the same thing, eat what is in the fridge first before making any new food. Thank you for your great comment.
