Saturday

Sorry I have been absent for the past week, but I’ve been sick and have not felt up to posting this week. Last Sunday I started feeling sick and by the next evening figured I had the flu, so I went to the doctor on Tuesday to be tested, but the flu test came out negative.

Turns out I was bitten by a spider.

After feeling poorly with fever and chills all week, I am finally feeling much better today. Those spiders may be little, but they sure can make a person sick.

This morning I was up by 6 a.m. and have so much more energy today for which I am very thankful.

Here is what I’ve already accomplished this morning:

Laundry – Washed, folded, and put away three loads of laundry.

Refrigerator – Cleaned out the refrigerator and washed the dishes. I always do this before I take off the garbage. I still want to wipe it out inside before the day is over.

Garbage – Gathered up this week’s garbage and have plans to haul it off later. Doing this ourselves saves us approximately $20 per month.

Cleaning – So far I’ve cleaned the bathroom, living room, and my bedroom.  Next on my list is to vacuum and mop the kitchen floor.

How has your Saturday been shaping up this week?

Valentine's Day 2013

Here is an article from the Chattanooga News Free Press about how much money is spent on Valentine's Day.

Cupid strikes gold for Chattanooga area merchants

According to the article, "Across the U.S., the average man will dish out about $175 for Valentine's Day, while the average woman will spend around $90, according to the National Retail Federation" and that $18.6 billion is the total that will be spent on Valentine's Day in the United States this year.

I cannot imagine spending $90 on anyone for Valentine's Day.

Today I subbed in middle school and by the end of the day, many students had received Valentine's gifts including cards, balloons, stuffed animals, and candy. My daughter did not receive anything today and she is none the worse for it. She was grateful not to have to carry anything home.

Saturday Night Dinner ~ Free Pizza

Papa Johns Pizza recently had a promotion asking people to pick heads or tails on the Super Bowl coin toss for a chance to win a free pizza. I picked heads and called it right, so yesterday we were able to pick up a free pizza for dinner. How cool is that?

Sunday Dinner

Dinner at our house tonight is Hobo Packets. These are a simple dinner made up of a ground beef patty, onions, potatoes, carrots, and seasonings.

I start by peeling and cutting up my potatoes, carrots, and onions.

I mix my hamburger with onions, salt & pepper, worchesteshire sauce, and make patties with it.

I spray a sheet of aluminum foil with olive oil and then layer one hamburger patty, one slice of onion, potatoes and carrots and then add additional salt and pepper.

I wrap them up into individual foil packets and bake in the oven.

They are easy to make when I have all the ingredients lined up in a row. This is how they look on the baking sheet all ready to go into the oven.

And of course, this is the finished product:

As I've mentioned before, my daughter has recently showed an interest in cooking as well. She has even started her own food blog over at A Frustrated Teen Cook.

She contributed to tonight's dinner as well by making a batch of homemade ranch dressing and a batch of fried pickles.

And they were delicious! :)

That is what we had for Sunday dinner at at house. What did you have for dinner?
