Saving Money in my Frugal Kitchen ~ Week 4 ~ December 2023 ~ Menu Plan Monday

 



What’s Been for Dinner This Past Week

Monday ~ On Sunday I took a package of chicken thighs out of the freezer to thaw for a crockpot dinner on Monday. I placed them into the crockpot early Monday morning with some chicken broth and taco seasoning mix. 

Tuesday ~ Chicken BBQ Pizza for movie night. 

Wednesday ~ Chicken Enchiladas, Mexican Rice, Corn.

Thursday ~ Smoked Sausage, Green Beans with Onions & Potatoes, Corn, and Baked Apples. 

Friday ~ We had dinner later than usual as I was at the hospital with Dad. I ended up making some sausage patties and serving it with the green beans and and corn from Thursday evening. 

Saturday ~ We had our family get together for the holiday and we always do finger foods at this event. I brought pigs in a blanket and peanut butter chocolate chip cookies. We had a choice of several different lunch meats and cheeses, fresh fruit, and chips. 

Sunday ~ Christmas Eve ~ Garlic & Herb Pork Tenderloin, Scalloped Potatoes, Green Beans with Onions.

  1. Whatever sounds good and I have thawed. LOL I am not good at the planning meals for certain days. I run by more of the I have x,y,z,a,b meals available. What sounds good for today kind of meal planning. This week has been burgers, tacos, nachos, leftovers from late lunch out ummm drawing a blank. i need to go back to writing down what dinner was. I used to keep track so I didn't repeat anything too close.

    1. Lol, sounds good to me. Burgers, tacos, and nachos all sound good to me. I’m going to make chicken tacos for dinner tonight as that sounds good to me.

    I love using my crockpot...it's easy to not have to watch it all day. I'm so sorry your dad was in the hospital...I hope he's home now and resting. I hope you and Bailey had a great Christmas! Janel in NJ

    1. Yes, I love hoe easy the crockpot is to clean. I have an insert in mine, so I just add it to the other dishes I’m doing. Thank you about my Dad. I appreciate your good thoughts. He is still in the hospital for now.

  3. For the last four days, we have replayed the Christmas meal with turkey breast, sweet potatoes, dressing, cranberry sauce, green bean casserole, and zucchini. I wish I had enough for another week.
