Crash and Burn Items 5-31-11

Crash & Burn Items picked up today include 6 large boxes of instant Jell-O chocolate pudding for 50 cents each, 1 large can of Campbell’s Chunky soup for $1.20, and 2 cans of Campbell’s Chicken Noodle soup for 50 cents each. Total cost came to $5.20. I will also be saving the Campbell soup labels for back to school savings.

Bi-Lo Coupon Run 5-31-11

I made a coupon run to Bi-Lo today that went very well. I picked up 2 packages of Ball Park Buns, 3 Kikkoman Soy Sauces, and 2 bags of Golden Flake Tostado chips. My total sales before coupons came to $10.23 and since Bi-Lo doubles coupons up to 60 cents, I saved $7.70 with coupons. My out of pocket expense was $2.53 for everything you see pictured above. Here is a breakdown of the coupons:
2 Ball Park Buns – Regular Price: $2.69 - On Sale B1G1 Free $1.35 each
Used two $0.55/1 Printable Coupons
Paid: $0.50 for both after coupons doubled

Deal on Suave Deodorant

You can score some inexpensive deodorant with the Suave deodorant coupon in the 5/22 Red Plum insert that came out last week. I picked mine up at Walmart where they sell for 97 cents, and picked this one up for 47 cents, but you can do even better if you look for a sale on the item. Still I'm happy with getting it for 47 cents. Another one to add to my stockpile.

All You Magazine

Several people have been asking me about the $5.00 coupon for the Just My Size shirt that I wrote about in my last post. The coupon came from All You magazine, which is only available to purchase at Walmart for $1.88, or by subscription.This is a terrific magazine to buy because it usually pays for itself through the use of the coupons found inside and they have several articles and tips on ways to save money. Friday Walmart Coupon Run

Made a trip to Walmart today with my Mother, so I decided to use this opportunity to use a few coupons I had rather than do a full grocery shop. These are the items I picked up:

- 2 - 20 ounce Dr. Peppers - 1.48 x 2 minus $1.00 off coupon = $1.96
- 1 box Country Time Lemonade packs - $2.00
- 1 box Orville Redenbacher's White Popcorn - $2.98
- 1 - 5 subject notebook for school supplies - $1.88
- 1 All You magazine - $1.88
- 1 - Packaging Tape - $1.68
- 1 package Avery Note Tabs - $2.78 minus $1.00 coupon= $1.78
- 1 Just My Size Tank Top - $5.00 minus $5.00 coupon= Free
- 1 bag family size Cheetos - $4.38 minus $3.99 coupon = 39 cents
- 1 - 8 ounce package Kraft Mexican cheese - $2.48 minus $2.48 coupon = Free
- 1 Lunchables with Fruit - $2.74 minus $1.00 coupon = $1.74
- 1 package Hebrew National Hot Dogs - $2.50 minus $1.00 coupon = $1.50
- 2 packages Oscar Mayer Beef Hot Dogs - $2.78 x 2 minus $1.00 coupon = $4.56 or $2.28 package

My total for everything pictured above was $42.32, but I saved  $17.97 with coupons, so my total after coupons was $24.35.There were a couple of things that I normally don't buy like the Lunchables, but I had a decent coupon and my daughter considers this a big treat, so I am happy to buy her one once in while. I am tickled with the free shirt, I found a coupon in last month's All You magazine for $5.00 off a JMS purchase, so that coupon alone more than paid for the magazine last month. 

Did you know that If a coupon value exceeds the price of the item at Walmart, the excess may be given to the customer as cash or applied toward the basket purchase? Here is a link to a copy of the coupon policy at Walmart:

New Life, New Purpose Reuse Blog

Came across a neat website today about reusing items around the house and giving them a new life and new purpose. 

This blogger had an old bird feeder with both plastic and metal parts, and the metal parts had outlived the plastic section. So, she reused a plastic peanut butter jar to fix the bird feeder and made it like new again.

Mexican Rice

This is a tried and true family favorite that we have used for many years. I love this recipe and usually make a triple batch so I can freeze some for later meals. 

I've used this recipe as a side dish for Mexican food, make tacos out of it instead of using ground beef and then just top with lettuce, cheese, and tomatoes. Eaten it with just cheese on top for a meatless lunch or dinner, made Double Decker tacos out of it, and used it as a filling for burritos and enchiladas.

I made a triple batch today and included it as a side dish to dinner. I took the leftovers and separated them into five different containers and put them in the freezer. 

This is one of the reasons I save leftover food containers. I don't worry about using these for long term storage as I will use this rice up within the month. 

Making this dish from scratch is so much cheaper than buying the Instant Rice Dishes in the packages, and the flavor is excellent. Plus if you look for your ingredients on sale like I do you will save even more money on this dish. Now onto the recipe:

1 1/2 cups rice
1/4 cup onion, chopped
1 clove garlic, chopped
2 Tablespoons cooking oil
1 teaspoon salt
1 - 8 ounce can chicken broth
1 cup salsa
2 cups water

Heat oil until hot.
Add all of the rice and stir continuously until golden brown, about 15 minutes.
When rice is brown, stir in onion and garlic.
Turn off the heat and let rest for 5 minutes.
Add the broth, salsa, salt and water.
Stir a couple of times and let come to a full boil.
After it comes to a boil, turn the heat down to a simmer.
Cover with lid and allow to simmer for 15 to 20 minutes.
Turn the heat off and let sit for 5 minutes.

WFD: Bean & Cheese Enchiladas

This is a tried and true family favorite. This is a meatless dish, so it is also very economical to make. 

As you can see there is a can of black olives in the picture, which is not in the ingredient list. I added them to the bean mixture and a couple for the top of the dish just to give it some more bulk. 

At other times, I have added Mexican rice to the bean mixture and at other times I have also added ground beef, which had been browned. This is a very forgiving dish that you can play around with. 

I used up the two cans of refried beans I found last month for 35 cents at Bi-Lo's crash and burn section. 

The cheese is from the 5 pound package I bought last month at Sam's Club. I broke it down into smaller, easier to use packages. I did not use the Monterrey jack cheese called for in the recipe. I used what I had on hand, which was cheddar cheese. 

This dish cost around $5.00 to make and served both of us for dinner and I have enough left over for two or three more dinners, so as you can see this is a very economical dish. 

I served this with Mexican rice, a salad and fruit cup as you can see from the picture below. I'm going to post the recipe for the Mexican rice in a separate post. 

Bean & Cheese Enchiladas


12 flour or corn tortillas
16 ounce can refried beans
1 cup cheddar cheese, shredded
1 cup Monterrey jack cheese, shredded
1/2 cup sour cream
1/2 teaspoon cumin
1 & 1/4 cups enchilada sauce

Mix the beans, 1/2 of the cheeses, the sour cream and the cumin together in a bowl.
Warm tortillas in the microwave to soften them.
Place a portion of the filling in the center of a tortilla.
Roll up tucking under the ends.
In a 13 x 9 dish place half the enchilada sauce.
Place enchiladas on top of the sauce.
Repeat with the remaining tortillas.
Pour remaining sauce over the top of the enchiladas.
Sprinkle the remaining cheddar and Monterrey jack cheese on top of the enchiladas.
Bake at 350 degrees for 20 minutes.
Serve with additional sour cream, guacamole, or salsa if desired.
