I had ground beef set out for Sunday Dinner and was thinking about making meat loaf or an impossible cheeseburger pie, but finally settled on Meat Balls.

I also fixed oven fried potatoes, sprinkled with EVOO and salt & pepper. I have plenty left over for a couple of dinners this coming week. 


I served this with corn and pickled beets. Here is what my dinner plate looked like:




Cooking dinner at home verses eating out in a restaurant saves us money that we can use in other areas of our lives. As always, I wash the dinner dishes immediately after dinner, so that I will always have a clean kitchen to work in and cook. This helps me to save money as well because I would rather go out to eat than try and cook in a dirty kitchen. :)
 
So always keeping the dishes washed up helps me to save money in the long run.

  1. I'm with you! I hate to have to clean the kitchen before I cook. I do dishes several times a day, but it is always nice to be ready to cook.

    Meatballs sound great. They're so versatile.

  2. We had chicken wings for dinner tonight and I kept it simple with just a broccoli salad for a side.

    Chicken wings are one of those pricey items when you buy them as a take out item or in a restaurant so we can make them at home for much less and I always bake them vs. restaurants that usually fry them.

    Meatballs are always a quick meal to put together when you have them on hand and so many things you can do with them, i.e. adding sauces or making sandwiches. Like Shara said very versatile.

    1. Chickens Wings sound good, Mary Lou. I love it when I can get a chunk of white meat on one of them. Oftentimes I can find them at IGA in the deli the day after in the cold food section really inexpensively. Sometimes I can get a dozen or so for less than $1.00. Love it when that happens. :)

  3. Belinda, that looks so good, esp the potatoes! Looks like the start to a country omelette or a hash! Did you make extra meatballs for the freezer? I try to do that as one of my "frozen assets." As you know, meatloaf and mashed potatoes here tonight, along with steamed carrots and a side of creole cabbage (a cabbage in stewed tomatoes type dish with onions, peppers, cooked in bacon fat-yum!)

    1. Thank you, Carol. I did make extra for the freezer. I love having them on hand and plan to use some of them in spaghetti and meatballs soon. Hash would be excellent to use up my leftover potatoes. I'm going to make salmon patties one day this week and will definitely use these again on that day. Your dinner sounds delicious. I'm going to have to get soon cabbage soon. I've had such a taste for it. :)

  4. That looks yummy, Belinda!

    We're having chicken and black bean chili leftovers. These are leftovers of leftovers, actually. The chicken and green peppers were leftovers from my son's dinner with friends (they made fajitas here last week), and I had cooked black beans in the fridge. So I added the chicken, peppers, black beans to canned tomatoes, onions, garlic and chili powder, on Tuesday. I then froze what we didn't eat, and tonight we're finishing it off.

    My son and his friends use our house and kitchen every Sunday and make dinner together. We get the leftovers. I think I like this arrangement!

      What a great arrangement you have with your son and his friends. I love get togethers like that especially when someone else is doing the cooking. lol :)
