Monday Night Dinner

Dinner tonight is Smoked Sausage, Homemade Potato Salad, and Fresh Broccoli with Homemade Ranch Dressing to dip.

This meal cost just under $4.00 to make at home. Always remember that feeding your family at home is a great way to lower your monthly food costs.

What’s for dinner at your house tonight?

  1. Looks delicious! We had homemade mac and cheese with diced ham in it, pintos cooked from dried, and zucchini (from our garden) bread. Angela

    1. Angela, thank you. You dinner sounds so good! :)

  2. Hi Belinda,
that sounds delish! I just got home from an extended orthodontist appt for one of my daughters (I'll be so glad when these are done), and will now make some dinner. These appts always take longer than I think they will, and I'm glad that I know that, as I planned a simple dinner. Baked tofu in leftover mushroom sauce over leftover rice, along with roasted carrots and onions. We eat tofu about once per week as it's a simple protein food to make.

I find that if I at least have a plan for dinner, and I have to be out all afternoon, that I can resist the temptation to stop and get take out. Same thing for lunch. When I work Tuesday and Thursday mornings, I have 2 plans (one on the sweet side like a pbj, if I've got a sweet tooth, and one more salty like egg on toast, if sweet doesn't at all appeal to me) for what I can quickly make for my lunch, otherwise it would be so easy to swing through a drive-thru. I try to think through all of my own excuses (and I can come up with a lot of those when I'm hungry) and find solutions. If I'm going to eat out, I want it to be something that I consider special, and not just a quick bite to eat. You're so right, cooking at home saves a significant amount on the cost to feed us.

I haven't had potato salad since last summer. That looks so good!

    1. Thank you, Lili. It had been a while since we had potato salad too and I was wanting some, so I made it.

Your plan to resist temptation for lunch/dinner is a good one! I too can come up with a lot of them when I am hungry.

I feel your pain on the orthodontist appts. We went through it with allergy shots and I do not miss those at all.

  3. We are having kielbasa with pasta tomorrow. It is my favorite meal. I add garbanzos and sweet opinions to the pasta with the grilled sausage. Yummy. Yours looks relish too.

    1. Thank you, Fiesta. Yours sound delicious too. I love kielbasa.

  4. Looks good as usual Belinda. Nice combination. I love kielbasa on the grill. We seem to have it more in the summer.

Last night we had burgers on the grill with french fries. We lucked out with the weather and managed to cook outside. I felt like keeping dinner simple.

    1. Thank you, Mary Lou. Your dinner sounds good, and simple is always good in my book. :)
