Saving Money In My Frugal Kitchen ~ Week #5 September 2025


My Frugal Week



These are some different vegetable trays I served with several meals this week.


Meal planning that incorporates budget friendly groceries with good nutrition is the name of the game here. It can’t be overstated how critical a good budget is these days while the cost of living remains high, but it’s also very important to me to keep the most nutritious food possible on our table. 

Publix had my favorite Almond Breeze unsweetened chocolate almond milk on sale for $2.00 each last week. I normally buy ten of anything I’m stocking up on, but the cashier informed me that Publix has a limit of eight sale items, which I didn’t know. No worries though as I was able to get eight for $2.00 each rather than the $2.75 they normally sell for, which saved me $6.00. 

It pays to watch carefully when buying anything. I went into UGO to buy their turkey pepperoni, which was on sale for $1.00, so I bought ten. Red bell peppers were also $1.00, so I bought four making my total $14 plus tax, but it rang up at over $17. 

So, I asked the cashier why and she said peppers were $1.48 each.  I told her about the sign and she asked the manager. Turns out they were $1.00 each, which lowered my total to $14.35, so paying attention pays off. 

On Wednesday I washed the kitchen laundry and multitasked by reading blogs while I was folding that laundry. One way we save money here is by not purchasing disposable, one use items.

Instead of paper towels, we use dish cloths, dish towels and reusable cloth napkins. I've not bought paper towels or napkins in years, so that is not an expense we have here. Also, I do not buy Kleenex as I use reusable flannel cloths I sewed years ago expressly for that purpose. 

Instead of dryer sheets, we use wool dryer balls. 

And we do not use paper plates, cups, or plastic utensils. This does involve a little extra cleaning, but does help us to save money here. 

If we do have any of these items here it's because someone gave us the items. I am not however, derogatory toward anyone for using paper plates or any of these disposable items as they can be a handy time saving convenience and I understand that is important to them. We simply don't use them here in our efforts to save money. 


This is rosemary that I picked free in the community garden and have hanging up in the kitchen to dry. 

On Friday People Helping People put the word out again that they had bread and vegetables to give away. So, I went and got the limit of two breads and more corn, okra, and a butternut squash. I just love that they give these items away for free. This time I was able to get twenty ears of corn. Here is a photo of them after I shucked them. 


These vegetables are grown by the Mennonites who live in our community and at the end of their sale week (Saturday evening) they donate what doesn’t sell to the lady who runs People Helping People. And she wants people to come get it, so it doesn’t sit there and go to waste. It’s a win-win situation for everyone. 


On Sunday I got busy processing all of that fresh produce. I broke green beans separating them from the field peas, which I will string later to dry. Shucked, washed and bagged the corn, washed and cut up the cucumbers and radishes, washed the mustard and salad greens, and made a cucumber salad to go with dinner. 


Breaking beans always bring back fond memories for me of breaking beans with family members who have since passed away and gone h0me. They taught me so many skills that I still use to this day and I consider it my duty to pass on to the next generation so these skills are not lost over time. 


Recipe of the Week

I went to ChatGPT for an eggplant recipe to use up the eggplant we received from People Helping People this week. 

I made this for dinner on Wednesday and I really liked it, although Bailey just thought it was so-so. The combination of the spices is what makes it taste good. 

I didn’t brush the oil mixture onto the eggplant slices, but rather poured them over the eggplant in a bowl, stirred to combine, and then placed them on a baking sheet. 

Roasted Garlic & Herb Eggplant with Tahini Drizzle


Ingredients:


2 medium eggplants

3 tablespoon olive oil

4 cloves garlic

1 teaspoon smoked paprika (I used regular paprika)

1 teaspoon cumin

½ teaspoon salt

¼ teaspoon black pepper

Juice of 1 lemon

2 tablespoons tahini

2 tablespoons water

2 tablespoons fresh parsley


Directions:


Slice eggplant into half inch slices. 

Sprinkle lightly with salt to draw out extra moisture, and pat dry. 

In a small bowl, mix olive oil, garlic, paprika, cumin, salt and pepper.

Brush on both sides of the eggplant.

Roast in a 400 degree oven for 30 to 40 minutes flipping halfway through. 

Make sauce by whisking tahini, lemon juice, and water until smooth.

Place eggplant on a serving dish and top with tahini sauce. 

Sprinkle with parsley.

This is a photo of me at People Helping People picking the free vegetables. I didn’t realize the owner took my picture and put it on Facebook telling people to come get the vegetables until after I came home and saw it on Facebook. I told Bailey I was famous now. 😂

 What’s for Dinner


Monday ~ Chicken, Sliced Tomatoes, and Bean Salad. 

I had an appointment and errands to run and didn’t get home until time to make dinner, so leftovers it was. It worked, we were fed and didn’t spend money on takeout. 

Tuesday ~ Homemade Pizza, Zucchini & Yellow Squash, Ranch Dressing

I used keto buns for Bailey’s pizza crust and the bottom half of a Joseph’s pita bread for mine, both bought on mark down. Her keto buns have so much fiber in them like 17 grams. I topped them with turkey pepperoni, black olives, tomato sauce, mozzarella cheese, and Italian seasoning. 

Wednesday ~ Eat Meati Cutlets, Roasted Garlic & Herb Eggplant with Tahini Drizzle and Corn on the Cob. 


I had these Meati cutlets in the freezer and wanted to use them up. They are made of mushrooms, so I wasn't sure we would like them. Turns out they were really good! So, if I find them at the closeout store again I will buy them. I served this with the eggplant recipe listed above and the fresh corn on the cob, both of which we picked up for free from People Helping People. 

Thursday ~ BBQ Pork Chops, Hot Potato Salad, and Baked Beans. 

I put the pork chops into my smallest slow cooker in the morning along with some BBQ sauce to cook all day. I put the potatoes in my instant pot in the early afternoon, so when it  was time to make dinner all I had to do was mix my ingredients for the potato salad together. I served this with baked beans. 

Friday ~ Bailey had book club and I had a tutoring session after school, so we didn’t have dinner together. She had chicken sausages, potato salad and baked beans. I made myself a pita pizza once I got back home. 

Saturday ~ Meat Sauce with Spaghetti Squash, and Green Peas.  

I had two spaghetti squashes in our fridge that needed using, so I took a small package of ground beef out of the freezer to thaw, turned that into a meat sauce, and served that mixed into the spaghetti squash. I served this with green peas.

Sunday ~ Meat Sauce with Spaghetti Squash, Fresh Corn on the Cob,  Garden Greens to top with Cucumber Salad, and Radishes. 

After getting and processing all the vegetables from the Mennonites and PHP, what I really wanted for dinner was an old time vegetable plan, which we will have on Monday. So this night we had spaghetti squash with meat sauce, corn on the cob, salads topped with cucumber salad, and radishes.

Fourth Frugal Friday of September 2025

 


Welcome to Frugal Friday!

My Frugal Week

We sold 400 items at the consignment sale, which brought in $1,128.50 and after the owners 40% cut, we brought home $667.10 from the sale. It’s always a lot of work, but definitely worth it. 


Bailey went to a fill a bag for $10 event at a local thrift store and found me five brand new LuLaRoe shirts in my favorite style, the Erika swing shirt. I love this style and she bought one medium and four in the small size as she thought they would fit me and they did. Now I can get rid of the XL ones as they are falling off my shoulder.

On Saturday I had a grocery order delivered from Walmart that included cat food, cat litter, and a Zero water filter. Those boxes of cat litter are heavy, so I’ll gladly pay a good tip to have those carried up the stairs. My friend Linda has one of those stair chair lifts and uses that to haul her cat litter up the stairs. 

On Monday I stopped at Publix for a sale on almond milk, Aldi to try their protein shakes, UGO in Cleveland for turkey pepperoni and red peppers, and lastly to Walmart for bananas, cottage cheese, and cheddar cheese. 

Savings of the Week


On Tuesday I went to UGO in Chatsworth to buy some of their turkey pepperoni, but they were sold out. I did find the large bottles (34 ounces) of Spic & Span for $1.99, so I stocked up on those and bought six bottles. 

We normally buy these at the Dollar Tree in the 16 ounce containers for $1.50, so this saved us $3.60. When we consistently purchase items at a lower price across the board we save money as the savings does add up over time. 

They also had Yoplait yogurt with a short sale date, which was six for $1.00, so I picked up six. 


Afterwards I went to Ingles to check for meat markdowns. There were people hanging around waiting on the meat manager to finish his markdowns, which happens more often as people struggle to afford groceries these days. 

The lady next to me commented that the markdowns were not as good as they used to be and these days only seemed to be marked down $1.00 or so, and I agreed with her. Bailey and I just had the same conversation last week. I ended up not buying any meat markdowns as the prices, even after being marked down, were more than I was willing to pay.

I did pick up some October/cranberry beans as they were on sale for $1.58 per pound and they are my favorite beans, so I bought four pounds. 

I stopped by a couple of Little Free Libraries on the way home and dropped off and picked up a couple of books. 

Decluttering & Downstairs Cleanup Continues 

I found another area that needs to be cleaned up downstairs. There are cabinets from floor to ceiling in some areas down there and I knew there were boxes inside them that were never touched again from 1986 when we moved here from Illinois. 

When my sister came last year, she checked them and said it was just empty boxes, so I never looked. I checked one last Friday and the one I checked wasn't empty boxes, but filled with boxes and boxes of mail and other stuff as far back as the 1960s and 70s. Insert a big sigh here.

So, I took one box and went through it. I found a stack of 45 records with such titles as Roy Orbison’s Pretty Women, The Rolling Stones, and Patsy Cline on Decca Records. This stuff cannot just be thrown away, but will have to be gone through as well. 

I’m just going to take my time and do one box at a time when I’m feeling like it and not stress out about it. I did go down there on Saturday to take care of some liquids Dad had stored in open buckets. I had some containers with lids that worked to dispose of these. As always, it’s a work in progress inside and outside. 

Recycling

On Saturday there is a recycling program going on in Chattanooga. My Dad has multiple tires around the property and I want to take them to this event. They will take up to  eight tires, and if they have room on the truck, will take each additional tire for $1.00 each. 

This got me to thinking, there is an old tractor battery in the pole barn that needs to be disposed. I looked up the local metal recycling place and saw they buy batteries for 18 cents per pound. So, I took the battery, it weighed 34 pounds, and they gave me $6.12 for it. 


The website states they do not take tires and I wanted to confirm that, which they did, but he told me they do take rims. Perfect! There are several rims in the pole barn too. I'm happy to sell these to them rather than pay someone to haul them off for me. 

When I got back home, I walked around the property counting tires. There are around six in the pole barn and I found five more in the woods. They are not all going to fit into my car, but I will take eight to this event and work on the rest later. 

I also found four glass jars in the woods, so I picked those up and put them on the picnic table and will figure out what to do with those later. 

Freebies



People Helping People, our local charity shop, wrote on Facebook that they had free vegetables to give away on Tuesday and asked people to come get some. I went and came home with corn, squash, zucchini, okra, and a couple of varieties of eggplant. 


And while I was there I picked out three things from the free box. There is a limit of three items, so I picked up three Crest toothpastes. 

Joy & Photo of the Week


We have a flowering plant in our kitchen window and the other day when I was washing dishes, a hummingbird came to the window and hovered in front of the flower for just a few seconds. That hasn't ever happened before and was so sweet. 


Also, twice on Tuesday I came across a flock of Canadian geese in the grass. In September they begin their journeys south to find food and avoid snow from up north, so it was an immense joy to see them. 

Saving Money on Entertainment

This week I received an email from Hulu that my 99 cent subscription will end in October and I will be charged $11.99 per month now. So, I cancelled my subscription as there is plenty of free entertainment out there.

Gill over at That British Woman recently wrote about the $1.00 house series on YouTube, so I checked it out this week. This is an interesting series on how she is bringing this old home back to life.

Saving Money In My Frugal Kitchen ~ Week #4 September 2025


My Frugal Week

On Tuesday I stopped at Walmart and used my $25 gift card on groceries. I bought cottage cheese, Greek yogurt, cheese, turkey pepperoni, onions, red peppers, black olives, and a watermelon. The extra $25 came in handy as I’m watching my pennies due to the auto repair this month. 

On Saturday I chopped an onion, red pepper, and diced up some of the chicken breast for Bailey to have on Sunday when she does her breakfast meal prep for the week. This week she made a breakfast casserole using part of the chicken we bought last week. 

 

What’s for Dinner

Monday ~ Italian Marinated Grilled Chicken, Garden Salad, and Baked Potatoes. 

For this dinner I used up the last of a container of Kroger Italian dressing from the refrigerator. I placed it in the crockpot and let it cook most of the day, so it was fork tender by dinner time. 

Tuesday ~ Homemade Pizza, Salad, and Watermelon for Movie Night. 🎥 

I was out of mozzarella cheese and turkey pepperoni, so I picked up those items to make pizza for dinner. I used one of the Joseph’s lavish flat breads, bought on markdown, for the crust as they are low carb and do not impact my blood sugar like regular pizza crust made with white flour. 

Wednesday ~ Meatloaf, Roasted Potatoes, Corn on the Cob

The meatloaf was made and frozen without cooking before, so all I had to do was thaw and bake. Sides were Yukon gold potatoes roasted with EVOO and fresh corn on the cob. 

Thursday ~ Meatloaf or Roast Beef, Cheesy Potatoes, Corn on the Cob, Pickled Beets

This was a motley crew of leftovers after a tutoring session for my niece. I had an emergency errand to run earlier in the day, which made everything later than usual. So, after they left from tutoring I did the best I could to get dinner on the table. 

Using the last of the meatloaf from the day before, and opening a small can of roast beef, opened and made some canned potatoes topping them with cheese, and the leftover corn on the cob from the day before too. It worked, satisfying our hunger and I didn’t spend money on takeout. 

Friday & Saturday ~ Mesquite BBQ Chicken, Roasted Potatoes, Carrots, Cabbage, & Onions, and Bean Salad. 


Using my electric knife, I cut the chicken breast into slices.  Bailey had hers as a sandwich, but I had mine sans bread. I sliced a tomato and served pickles, onions, and lettuce for her sandwich. 

I cut and sliced the potatoes, carrots, cabbage, and onions and used some EVOO and garlic salt for seasoning and roasted the vegetables. I also made a bean salad earlier in the day and added onions, red peppers, and tomatoes to it as well. And I cut up a small watermelon for anyone wanting something sweet after dinner. 

Sunday ~ Roasted Chicken, Roasted Cabbage & Onions, Roasted Potatoes. 

After dinner I pulled all the meat from the chicken bones and then, using my crockpot, made the most beautiful chicken broth, which I saved and froze for another day. I also froze the remaining chicken meat for another day as well.

Third Frugal Friday of September 2025





Welcome to Frugal Friday

My Frugal Week

I kept track of all my spending last week and only spent money for gasoline paying $2.66 per gallon and one small grocery order consisting of two items for $10.61. I entered my receipts into Fetch and NCP. 

I received a payout from the Robitussin class action lawsuit for $36.00. 

On Saturday I walked the half mile to our mailbox and back. 



On Monday I received a $25 gift card to Walmart from my insurance company for getting my mammogram done this summer. I used it for groceries to pick up a few items we needed. 

Freebies


I picked up this free water test kit from Lowe’s this week. They had multiple free kits right inside the entrance if you’re interested in getting one. 

Saving on Electric

Our electric bill was $34.51 lower than last month’s electric bill. So, turning the air on eco at night is helping to save money on our electric bill. I love this time of year when we can expect lower electric bills due to not needing the air conditioner, which is our biggest electric expense, as much.

We had a fan fall onto the chain for the light above our washing machine and pull the light fixture out of the ceiling this week. It’s already been fixed, but just to be safe I did turn the power off to the whole house when we left to get replacement parts.

This is the new blessing box at the church near our home. The box used to be a plastic bin with a rock on it so the wind wouldn’t blow it away, which was less than ideal. So this new upgrade is really nice. I put a few things in there yesterday and again today. I enjoy going and seeing what people take from the box. 

Savings of the Week ~ Bargain of the Week


My bargain of the week came from United Grocery Outlet. They had these Mesquite BBQ Seasoned Chicken Breasts on sale for $1.99 per pound, and most of them were $12.50 or more. But, I found one that was oddly very low in price marked at $1.64, and it was the only one like that, so I picked it up and brought it home. 

When I got home I put it on the scale and turns out the weight on the label was wrong. This chicken breast was over six pounds and not the .81 pounds stamped on the label. Oops! I don't think it was as much as a bargain of the week as it was more of a mistake from their meat department.  


Saving Money on Entertainment

This week I watched the film, The Unforgivable, on Netflix. It had a surprise ending and I really enjoyed watching it. 

I’ve also been watching Forensic Files for free on Facebook under the video reels section. I throughly enjoy watching these as they prove there is no such thing as the perfect crime. The show went for fourteen seasons and can also be watched on Amazon Prime if you have that subscription. 

What I've been Reading This Week

This week I've been watching Facebook reels for Suttons Daze, which led me to her YouTube channel and her website. She is a wealth of information on building a pantry, everyday preparedness, food preservation and more.  Her Project Pantry  archives are full of ideas, and tips to help you build your pantry for your family with food you eat everyday. It's definitely worth a look see.
