Meal Plan Monday

Meal Plan Monday

This was my original meal plan, sides were to be determined later:
  1. Tacos & Dos Bros Corn Salsa
  2. Ramen Asian Noodle Salad
  3. Baked Vegetable Egg Rolls
  4. Polska Kielbasa, Mac & Cheese
  5. Subway Sandwiches
  6. Loaded Baked Potatoes (Cheese, Green Onions, Black Olives, Sour Cream, Butter, Bacon Bits, Chives)
This is what we ended up with this week:

Sunday: Taco Salad

Monday: Taco Salad

Tuesday: Ramen Asian Noodle Salad

Wednesday: Back when I was growing up smoked sausage and polish sausage tasted so good. Today's sausages aren't as good as those I remember. Could be that I grew up in Illinois but now live in Tennessee. I know the Italian Sausage in Illinois is far superior to anything here. Having said that, we tried the Kroger brand Polish sausage this week, but it too wasn't as good as what I remember.
Polish Sausage, Fried Potatoes, Green Beans. 

Thursday: For dinner tonight we decided to have Butter Dogs. One of my favorite things about summer is having a bowl full of red ripe tomatoes on the kitchen counter. I had all the ingredients on hand for my favorite Cucumber Tomato Salad including red onions, red pepper, and even green onions.  Butter Dogs, Cucumber Tomato Salad

Friday: Homemade Pizza

Saturday: Grilled Chicken Salad

Sunday: On this day I decided to make the corn salsa and make Tacos to go along with it. I roasted the poblano peppers and made the salsa and cut up lettuce tomatoes, onions, and shredded cheddar cheese. Tacos & Corn Salsa

Here is what I'm planning for this week, sides to be determined later:

Chicken Pot Pie
Spaghetti
Subway Sandwiches
Homemade Chicken Strip Sandwiches

Grilled Chicken Tenders
Easy Sausage Quiche
Loaded Baked Potatoes
(Cheese, Green Onions, Black Olives, Sour Cream, Butter, Bacon Bits, Chives)

Of course this could change based on my energy level that day or any other circumstance.  :)

  1. I'd nver heard of doing a hotdog on the grill like that, but sounds like a tasy enhancmeent. I am overdue for making another batch of black bean and corn salsa. I love that with chips, on burritos, in bowls, and on top of salad.

    1. That black bean and corn salsa sounds good, Sam. The combination of black beans and corn is so good. The hot dogs are good and a little bit crispy on the edges, so it's a nice change of pace once in a while.

  2. All your meals sound so tasty - but for me it's back to the salads with changing proteins. I've gained about 15 pounds during lockdown (mostly because of eating way too many carbs for me) so trying to get back on track. I don't call it a diet - just eating what works for me to try and keep my weight down (I have high BP and knee problems). I've managed to lose about 50 pounds over the past couple of years but need to lose another 50 so I try to take advantage of the fact that produce is a bit cheaper at this time of year.
    I also get a bit lazy about cooking in the summer - it's been nearly 100F for about the last 10 days with no relief in sight so salads are the easiest things to prepare. I might get a bit daring and make a bit of pasta salad to add to the greens this week - WooHoo!

    1. Thank you, Margie. The salads with changing proteins is delicious. We love salads here.Yes, it is hard to cook when it is so hot, salads to the rescue! Congratulations on losing 50 pounds over the last few years,that is terrific. I have not weighed since the pandemic started. I have been wondering about that too. Pasta Salad added to your greens this week sounds good to me. I hope you have a great week. :)
