Menu Plan Monday ~ Saving Money in my Frugal Kitchen ~ First Week December 2024

 My Frugal Week

What didn't get eaten of our Thanksgiving leftovers were put into the freezer over the weekend to save for another day.

What’s for Dinner


Meatless Monday ~ Spaghetti & Meatballs. I took the meatballs in sauce out of the freezer, which had been saved from another meal. I baked a spaghetti squash and used it as the noodles for the meatballs. We've been trying to stay low carb and steering away from sugar, flour and white pasta and white rice, so spaghetti squash is a good alternative for the pasta. 

I served this with steamed carrots for the vegetable and some garlic bread on the side for those who wanted some.

Taco Tuesday ~ Grilled Chicken Taco Salad. 

Wednesday ~ Chicken Burrito Bowls.  

Thursday ~ Thanksgiving Dinner of Turkey Breast, Dressing, Green Beans with Onions, and Deviled Eggs. 

Friday ~ Leftovers

Saturday ~ We had our family get together for Thanksgiving on Saturday. I made Southern Spoonbread and a chocolate cake to bring. Other dishes served were turkey, macaroni and cheese, baked beans, dressing, and several desserts. 

Sunday ~ Baked Fish, Roasted Sweet Potatoes, Brussel Sprouts.

    We have had turkey and ham and leftovers for the past 3 days. I think it is time for something different today. ;)

    1. Thank you, Kathy. Oh yes, we had a lot of T day leftovers too and I decided yesterday we needed something new. LOL

  2. Thanksgiving leftovers are in the freezer here, too. They taste so much better later. We like baked fish too. It is such an easy meal. What do you put on yours? I do lemon pepper, lots of garlic and slivers of butter

    1. I did Cajun seasoning on the baked fish and added some lemon juice. Bailey really like the Cajun seasoning on fish. I can take it or leave it as I really like the lemon pepper like I do in tuna too. :)

  3. Pulling out leftovers from previous meals here. I need some days where cooking is really simply heat and serve. I love spaghetti squash, but Hubby says it tastes too sweet to him.

    1. Leftovers are the best to make life simple and easy. I find some vegetables to be sweet too. Especially the longer I stay away from sugar.

  4. Since Thanksgiving, it has been Thanksgiving leftovers. Tomorrow, we will find something else to cook and eat for a few days.
