Menu Plan Monday ~ 4-22-2024

 


My Frugal Week

Here we are already at the start of another new week. I hope you are doing well and saving money in your frugal kitchen. We definitely saved money in our frugal kitchen this week by cooking from scratch and eating all our meals at home. 

Recipe of the Week

This week I made my own homemade chicken nuggets and it's really easy to do if you want to make your own. I used what chicken I had on hand, which was two of the five ounce cans. If you have a twelve ounce can you can use that. Or you can use any type chicken you have on hand. 

I made these twice, the first time I used a fork and mashed the chicken and mixed the ingredients together well. The second time I mixed them in my food processor, which made a big difference and is the method we preferred as it made them more like chicken nuggets. 

I used a small cookie scoop to make them into even shapes and this recipe made eight nuggets. I made a double batch in case eight wasn't enough for the two of us, so naturally we had leftovers. 

Make sure you drain your chicken well, the drier the better. I only added the parmesan cheese because I felt like the mixture was too wet. And, you may not want to cook yours for eight minutes longer once you flip them. I like my food well done, so you can do less time on the flip side if you prefer. 

Homemade Chicken Nuggets


Ingredients:


1 can of chicken or equivalent (I used two 5 ounce cans)

2 tablespoons parmesan cheese

1/4 cup cheese

1 egg

Spices of your choice (I used onion powder and dill)


Directions


Drain chicken and place into food processor.

Add cheese, egg, and spices.

Process until mixed well and uniform.

Using a one inch pastry scoop, make 8 chicken nuggets.

Air Fry at 400 degrees for 8 minutes, flip and cook 8 minutes longer.

Chicken Salad, Egg Salad, Deviled Eggs, and Soup.

 

What’s for Dinner

Monday ~ Chicken Fajitas with Onions & Peppers, Lettuce, Tomatoes, Cheddar Cheese, Onions, Corn and Baked Apples. 

Tuesday ~ Grilled Chicken, Salad, and Roasted Sweet Potatoes. 

Wednesday ~ Salisbury Steak with Beefy Mushroom, Mashed Potatoes, Steamed Broccoli. 

Thursday ~ Baked Fish, Brussel Sprouts, and Baked Sweet Potatoes. 


Friday
 ~ Bailey had book club, so I baked a Purple Sweet Potato for dinner, which was delicious. 

Saturday ~ Homemade Chicken Nuggets, 15 Bean Cajun Soup Beans, Roasted Potatoes and Stir Fry Vegetables. 

Sunday ~ Beefy Baked Beans Baked Sweet Potato Chips, and Sugar Snap Peas.

  1. Good morning from the frosty mountains. I think I rushed the season by planting a couple of tomato plants in the garden, but hopefully the little Aldi greenhouse saved them.
    Your meals sound so good. Thanks for the chicken nugget recipe, my girl loves chicken nuggets. We have grilled hamburgers/hot dogs and had tacos, but I'm excited to smoke a pork butt that I bought for .99/lb. I'm going to try smoking some baked potatoes and see how that turns out. Hope you have a great week.

    1. Good morning, Kathy. Sounds chilly there, it is chilly here this morning too. I hope the Aldi greenhouse saved your tomatoes too. Your smoked pork butt and baked potatoes sounds delicious. So do the tacos and hamburgers. Let us know how your smoked baked potatoes work out.

  2. I asked Tommy to get out some canned chicken because if all goes right, we will have the chicken nuggets tonight. I only have large cans.
    I have thawed pork loin, thawed hamburger meat, and something else thawed to cook. Last week, we had chicken for several nights and I forgot what else.

  5. Interesting Nugget recipe. Can you use chicken other than that in the can? We don't often find that here in my grocery stores. Your menu sounds lovely.

  6. I’ve made the nuggets before, but didn’t process the meat. I might like the texture better that way . I just have to say no to the purple sweet potato lol. I don’t eat purple tomatoes either.lol (little Penpen)

    1. LOL, Penny. I was thinking that some people might be turned off by the purple potato as it could look unappetizing. Just think of all the antioxidants from that deep color though. LOL

      I can totally understand the texture thing with the nuggets. I can see how some people might not like them being fully processed.
