Meal Plan Monday

This will be a week of making do with what’s here as I don’t have plans to grocery shop until the weekend. So, here is what I am thinking will take place as of now.

Beefy Baked Beans, Mashed Potatoes, Mixed Vegetables
Chicken Fajitas, Mexican Rice, corn
Pineapple Sticky Chicken, Rice, Broccoli
Chicken Pot Pie
Tuna Salad Sandwiches
Soup Beans, Turnip Greens, and Cornbread

I’ve already made a fresh gallon of tea this morning. I had some Blackberry Lemonade on Saturday and it was so good. I need to figure out how to make it at home.

What’s for dinner in your home this week?

  1. It all sounds yummy. No groceries for me last week - may not go this week wither. I have plenty.
    Good job.

    1. Thank you, Cheryl I love not having to grocery shop because we have plenty That is great.

  2. Sounds really good. Will you share your Beefy Baked Bean recipe as it sounds just lovely.

    God Bless.

    1. Thank you, Jackie. Here is the recipe:

      It's a family favorite.

      Beefy Baked Beans
      1-pound ground beef
      1/2 cup chopped onion
1 - 28 ounce can pork and beans
      1/2 cup ketchup
      1 to 2 Tablespoons vinegar
      1 Tablespoon Worcestershire sauce
      1/2 teaspoon salt
      1/4 teaspoon pepper
      1/4 teaspoon hot sauce
Cook ground Beef and onion until Brown
      Drain well
Mix with remaining ingredients and stir well
Bake, uncovered, at 350 degrees for 30 minutes

  3. Blackberry lemonade sounds delicious! I love a broader variety of food, but am still working within the tastes of my family. Everyone has quite a different opinion at our table. ;-) I love tuna & egg salad (separately), but I'm the only one who would eat it.

  4. Your meal plan sounds good. We are using whatever we get from the garden or the produce stand while the getting is good!
Soon enough the fresh vegetable meals will come to an end and I will be missing them. In the meantime we are loving them.
