Breakfast Menu Ideas



Breakfast is not something I eat as soon as I wake up. I like to get good and woke up first and then eat later in the morning. Depending on how closely I am following my plant based diet, I might even have vegetables for breakfast. Even when I was working outside our home I would take my breakfast with me and eat it later. 

Having a list of easy, healthy breakfast ideas that can be made without a lot of effort would be a good tool to have on hand to make hectic mornings easier. 

Grilled Cheese or Cheese Toast is an easy breakfast. Place it in the oven, finish your morning routine, come back in about 5-7 minutes and breakfast is done.

Oatmeal is another good way to start the morning. I even have an oatmeal making station in one of my kitchen cabinets, which includes raisins, dried blueberries, brown sugar, peanut butter powder, cinnamon, pecans, dates, walnuts, and from my fridge I can add butter, milk, or even frozen blueberries from the freezer. It’s chock full of nutrients and delicious. 

Pancakes  or Banana Pancakes  are another good item to have for breakfast. You can even freeze them to have on mornings when there is no time to cook. Then you can put them in the toaster or microwave to warm up. 

Waffles makes for a great breakfast. I made some this morning and included pecans and warm maple syrup. I even make extra to freeze for another day.

 Muffins

Scrambled Eggs

Homemade Crockpot Granola

Yogurt

Fruit

Eggs such as scrambled, fried, boiled or even made into a Fluffy Baked Omelet  makes for a good breakfast and has enough protein to keep me satisfied until lunchtime. 

Start your day off right with a good breakfast.

  1. I'm really boring. I usually wake up because I'm hungry! So my breakfast has to be easy and quick to make. I eat bread ( sliced bread or rolls) topped with ham, eggs or hummus/pesto+vegetables, with a big cup of tea. If I eat something else, like an omelette or porridge, I end up being hungry in two hours. My body has just got used to getting bread every morning... but bread could be anything (but it can't have sugar, I can't have something like banana bread as breakfast unless I eat a slice of bread, too).

  2. I cannot stand food in my mouth in the morning, so I never eat breakfast. I do occasionally have breakfast foods for lunch, be even so I don't like traditional breakfast fare. Omelets are ok now and then, and muffins are good. About two times a year I crave oatmeal, but never as an early morning thing.

  3. Two ideas for you, one that works well if you need a grab & go option:
    -Prepped homemade breakfast burritos. Plenty of recipes out there, and lots of opportunities to include veggies.
    -Baked oatmeal. One of my favorite options to make on a weekend, and then heat/eat during the week

  4. I've been taking a couple of packs of instant grits and a pre-cooked sausage link to work. I cook the grits in the microwave, heat the sausage link and crumble it into the grits. It keeps me full until past lunchtime so I don't have a big lunch.

    1. The hospital where I used to work used to serve cheese grits for breakfast, lunch, or dinner. They wee so good.

  5. I rarely eat breakfast at breakfast time too. With my Intermittent Fasting, I'll add breakfast as lunch options as I love brunch.

  6. I love scrambled eggs for breakfast with a glass of milk. Scrambled eggs or oats were what I had for breakfast when I was a child and all the way through school with milk. We had stewed prunes in a little bowl and a piece of toast with both meals. Some days, I am famished as I wake and some days it is hours before I am hungry.

    1. I can usually wait a few hours for breakfast, sometimes not though. It just depends on the last thing I ate and how long ago it was.

  7. Same here, I can't eat first thing in the morning, it's brunch for me. I often make batches of mini veggie quiches using muffin tins. They freeze well too. Just a minute in the microwave while I toast a slice of whole grain bread and brunch is ready :)

  8. I usually wake up, have a coffee, and then walk. I will then have breakfast, usually yogurt, toast or cereal of some kind. I rotate those.

    I have never had any luck freezing pancakes and warming them in the toaster. I must be doing something very wrong.

    1. Sometimes things get watery in the freezer and that could be the reason. I know when I freeze breakfast burritos the eggs can get watery at times.

  9. I love your ideas!
    I go thru cycles, and I hate to admit but I am on a poptart kick now; those cinnamon roll poptarts are too good. Usually it is cereal or oatmeal with a bigger breakfast on some weekends which might be sausage and biscuits or eggs. Sometimes I fix a bagel with sausage and egg. I tried the overnight oats thing, but I do not like cold oatmeal at all.

    1. I really like sausage for breakfast, but I'm trying to stay away from it for my health. It is so good though. I've not tried those cinnamon roll pop tarts. They sound good though.

  10. I like savory things for breakfast. Lately I’ve been trying different versions of savory oats. I sautée onions, bell peppers, mushrooms, scallions etc in olive oil, add oats, salt and pepper, and cook in either water or chicken stock.

    This morning I added cheese to the mix. 😊

    I also have a cup of tea or coffee, and a glass of mixed fruits/greens juice.

    That keeps me full until my morning classes are over. 😊

  11. They all sound delicious.But we don't eat breakfast. I have a diet coke. Sometimes on a special day or when the kids are home I make big breakfast. We both love breakfast, but Hubs does the 17 hour fasting thing and I just am not hungry until about noon.

  12. I do much better waiting to eat, too; usually start getting hungry around 11. Eating breakfast is like priming a pump for me; I'm twice as hungry at lunch if I eat early. I wish I could skip eating at night as easily as I can morning eating, though. That's my big problem.

    1. I have noticed the same thing, Carol. If I do eat breakfast I eat more calories for the day than if I just wait until I am hungry.
