Monday Night Dinner ~ Chicken with Rice & Vegetables

  
I was originally scheduled to work half a day today, but received  a call at 6 a.m. to come in for a full day, so my original dinner plans were put aside and I made an easy dinner instead. 

 Dinner tonight is Chicken and Rice with Vegetables.  I bought one of the Great Value packages of Cheddar and Broccoli Rice from Walmart. These make a very tasty and affordable part of dinner for 86¢. I added a can of Great Value chicken, which cost $1.75 per can. On the side I served a package of Carrots, with Green Beans and Corn, which cost 99¢. 

Total cost of the dinner was around $4.00 and served two people for dinner. I also was able to make two lunches or dinners besides and still have enough rice leftover for another meal. So, that makes six servings for about 66¢ each. Not bad at all. :)

  1. Yum! that looks so good. Agree that sometimes it is wise to lean a bit on convenience if it means staying away from the take out line! Lunch sides will make everyone jealous tomorrow!

    1. Thank you, Carol. :) Another half day tomorrow...this is the week of half days it seems like, but oftentimes it changes in the morning. I get up and get ready just in case.

  2. Teachers taking 1/2 a professional/conference day or 1/2 a personal day perhaps? You benefit anyhow. : )

    1. Yes, I do and take every day that is offered to me. Tomorrow the teacher is taking half a personal day. Professional days usually end up with me receiving 5 or 6 phone calls. It used to bother me to have to turn anyone down, but now I know they understand. :)

  3. Our call out system is all computerized. I fill in a job opening, subs selected as "preferred" receive either phone/text/email notification, and otherwise any sub can view the sub jobs on line. We are able to post lesson plans, special instructions, and leave feedback. Initially, teachers, myself included, were hesitant, we liked calling Linda the secretary, but then she'd call around to get coverage. There were and have been some bumps, but this system works well. It's called Aesop.

    1. I've heard about it, but didn't know very much about it. My FIL's wife is an Algebra teacher in Jacksonville, FL and she says they have that system. It sounds like a great system.

  4. It's always good to have a couple of those rice or pasta mixes in the pantry. Some nights you just need an easy side dish or a quick main meal.

    We had pork chops and baked potatoes with applesauce. Simple..no veggies tonight. I just wasn't in the mood. Sometimes I feel like we eat the same veggies all the time and I needed a break since dh isn't really a veggie person.

    1. Your dinner sounds good, Mary Lou. I feel the same way about the vegetables we eat, like we always eat the same ones. It used to be broccoli all the time! lol

  5. Hi Belinda,
    that looks yummy and probably hit the spot when you came home at the end of the day. It's always wise to have a back-up plan. For me, that often means pancakes for dinner. At least it keeps us from getting take out.

    Tonight it's a spring ritual for us, beans and greens over rice. When the fall-planted leafy greens like mustards and kale come back in March, we have beans and greens. It sort of says "spring" to me!

      Your dinner sounds good. I like all of those beans, greens, and rice. What kind of beans did you make?

    2. I used black beans, as I had some in the freezer, all cooked. But I've also used small white beans, black-eye peas and pintos in this, before. The dish I make is just a one-pot-on-the-stove thing, with sauteed onions, garlic, greens, salt, red pepper flakes and beans. When I have ham or sausage, I add a bit of that as well. I serve it over rice. Simple, healthy and filling.

  6. That looks good! My mama always liked(s) to use those packets.
    Simple supper here compliments of the crockpot. Beef stew and some quick garlic toast. Not on my menu, but an insane day so I was glad to be able to toss it in and let it go.

  7. Dinner looks nice. Might have a go but use plain rice and chicken as I'm Lactose intolerant. Daughter might eat it.
