Here is a list of what I planned on making for dinner this past week:

And here is what we actually made this week:
1. Sunday: Pulled Pork Sandwiches
2. Monday: Cabbage Rolls
3. Tuesday: Cheesy Potatoes
4. Wednesday: Breakfast for Dinner
5. Thursday: Taco Pie
6. Friday: Pork Tenderloin
7. Saturday: Spaghetti
Sunday: We had some pulled pork in the freezer, so I pulled that out to thaw and added some BBQ sauce to it and made BBQ sandwiches. I served this with corn on the cob and potato salad.
Monday: My daughter requested cabbage rolls for dinner recently, so that's what I made today. I served these with steamed broccoli and seasoned rice.
Tuesday: I pulled some ground beef from the freezer and made Cheesy Potatoes for dinner. I served this with steamed broccoli and corn and also had some bread sticks to serve.
Wednesday: We went to town to use faster WiFi to work and stayed later than we planned. We didn't get home until 7 p.m., but I still managed to cook something and not go out to eat or pick up fast food.
I don't normally make breakfast for dinner, but eggs are quick enough to make, so that's what we did. I served it with toast, some leftover mixed vegetables and sliced tomatoes. It hit the spot.
Thursday: I had one pound of ground beef in the fridge to thaw and decided to make a taco pie. We had a can of crescent rolls we bought on mark down for 53¢, so I baked that, made some taco meat and baked it long enough for the cheese to melt. I served it with lettuce, tomato, and onion on top along with a dollop of sour cream.
Friday: I took a Garlic & Herb Pork Tenderloin out of the freezer yesterday to thaw and made that in the Instant Pot today. I made potatoes in my other Instant Pot and made mashed potatoes with those using half and half that my daughter picked up on mark down. I served this with green beans & onions as a side dish.
Saturday: This day I went to pull some meat from the freezer and Italian Sausage was right up front, so that's what I pulled out. I made spaghetti and used fettuccine noodles since they were up front too. I served this with a side salad and garlic cheese bread sticks.
Everything sounds so good! We had an easy week of meals. I packed hot cereals, eggs, and bread for breakfasts. Lunches were the option of leftovers from the night before or sandwiches (sunbutter and jelly or fried egg). Every night we had a casserole I had made in advance and frozen -- with the exception of one night splurge where we ate out since we were on vacation, but even then we were careful and spent $23 for 3 people.

Last night I cooked turkey slices, and frozen Brussel's Sprouts and sliced tomatoes. I have no idea what I ate the rest of the week.
That sounds good, I love Brussel Sprouts.

Sounds so good, Kelly. We love Submarines here. We don't have them very often on the dinner menu, but I need to change that. LOL

Sometimes I have an omelet for dinner. I’ve found that light dinners help me sleep better. 😊
