Fourth Frugal Friday of May 2023

My Frugal Week

On Monday I had an appointment with my retina specialist and received another injection in my eye. He told me the swelling was worse than it was six weeks ago and has me coming back in four weeks for a new medication injection in that eye. 

Other than that I’ve spent this week at home, not spending any money. I did some steaming and processing for Bailey and did a lot of cleaning, but other than it’s been a quiet week here. 

I cut open my favorite lemon toothpaste tube to get the last little bit out of the tube before tossing it. 

Saving Money In My Frugal Kitchen

On Tuesday I deep cleaned my kitchen sink area scrubbing the top and bottom of my dish drainer, the counter top, behind the sink, the faucet and the wall behind the sink. I love how clean it looks after a thorough scrubbing. 

I made several items that day also such as more jello fruit cups, two dozen boiled eggs, soup beans, cut up two melons, and made some banana pudding. Except for apple sauce, I was out of canned fruit for the jello cups, so I used fresh clementines instead. 

Meals This Week

All meals are served with either salad or vegetables and may not always be listed here. 

* If you see a dinner in bold print that means we had it more than once this week.

Lunches:

Chicken and Olive Spread

Dinners:

Hamburgers, Roasted Potatoes, Corn on the Cob. 
Grilled Chicken, Green Salad, Roasted Potatoes
Hawaiian Chicken Thighs, Scalloped Potatoes, Broccoli
Same as Tuesday, but added Green Beans with onions as the vegetable.

Recipe of the Week

Banana Cheesecake Pudding

This is an easy recipe for banana cheesecake pudding using cottage cheese. 

There are four tablespoons in the small box of the sugar free pudding mixes and this recipe calls for two, so you can either save the other half for  another day or double the recipe. 

There are twelve grams of protein in the cottage cheese, so much more protein than if you were to use milk in this recipe. 

Ingredients:

2 bananas
1/2 cup cottage cheese
2 Tablespoons sugar free cheesecake flavored Jello

Directions:

Add ingredients to food processor. 
Pulse and then process until smooth and creamy. 
Refrigerate until chilled and ready to eat.

We’ve been watching Gilmore Girls lately as it’s been several years since we’ve watched it. We have all of the DVDs, traded for at McKay Used Books over the years. Based in the fictional town of Stars Hollow, Connecticut, it is home to Lorelei and Rory Gilmore, a mother daughter team figuring their way through life with a lot of witty banter thrown into the mix.

  6. I am one of those tube cutters to get the last smidge of product out. I did it recently with a tube of moisturizer and kept up with the number of extra days I used it. It turned out to be 12 days of morning time moisturizer. I cut the tube in half in the middle, then push the two parts back together. It keeps the product from drying out, and allows me to use every bit of it.
    On another note, I have made your Hawaiian chicken several times and we love it.

    1. 12 days is really something! That is a great tip to keep it from drying out too. I have to wonder if they design these bottles so you can’t get the last little bit out. Inquiring minds want to know. 😂

      I’m so glad you’ve tried and liked the Hawaiian Chicken. Thank you for letting me know. We also like the Pineapple Sticky Chicken, but if I don’t have hoisin sauce on hand I make the Hawaiian Chicken as it’s similar and we enjoy it too.

  7. I always learn something from your blog, I had never heard of lemon toothpaste! Sorry to hear about your eye, oh how I hate shots, can't even imagine one to the eye. Wishing you well in your future treatments. We mostly stay home as well, but this week took a little day trip and treated ourselves to sandwiches from a small town cafe. I had sticker shock when two sandwiches came to $27! We did get pickles and chips but wow! They were very tasty and a treat but still... ;-)

    1. The lemon toothpaste is much more tolerable to me than the fresh minty types of toothpaste as so many of them seem spicy hot to me. They have some other flavors too, but I’ve not tried those.

      Your day trip sounds like fun! I know eating out can be expensive, but it’s not as if you all are doing it on a regular basis. I think treating ourselves every now and then is a good thing.

      Thank you for the good thoughts about my eye. The shots are not as bad as you might think. A little uncomfortable, but over in just a second. It’s worth it to try and save my eyesight. 😊

    2. Sorry sorry sorry about fear of eyesight loss. That’s so hard to hear. Are you able to make some health and diet changes to reverse the diabetes and mitigate the eye damage?

    3. Oh, I’ve already made the changes necessary to reverse the diabetes with a whole foods plant based back in 2016. The damage was already done though, but I didn’t know it then, and cannot be reversed, unfortunately.

  8. Staying home saves money, which is why I only shop every two weeks. Shop anymore and strange items end up in the cart. I do hope your eye gets better very soon.

  9. I hate minty toothpaste, but never heard of lemon. What brand?
    Mine is not macular degeneration. I have a macular pucker that is caused by nothing. It just is. And, it is pulling the retina away from the eye. I have to do an eye test every day. And, report any sparkling sensation or bright lights in my eye. I hope to never have a shot in my eye. There is no way to stop this and was not caused by diabetes. But, it will cause blindness. I have had to go to the eye emergency room in Birmingham. They will do surgery if I need it in the middle of the night. If I wait to go, I will lose my eyesight.
