Meal Plan Monday


About two weeks ago I had been feeling a little uninspired in the kitchen, and I heard that according to grocery store planners that happens regularly with people at this time of year. 

So, I made the effort to get back into some old family favorites and that has made a difference lately. 

Meals This Week


Aldi Red Bag Chicken, French Fries ~ I have been wanting to try this  chicken for a long time. This will be the week. 

Italian Sausage, Penne Pasta, Garlic Bread, Broccoli ~ have one package of Penne pasta I want to use up and this will be the week that I finally use it. 

Chili Tacos ~ The last time I made chili, I put some in the freezer for this meal. However, I ran out of tortillas, which is rare here. So I picked some up at Aldi this past week and can now have this on the menu. 

Swiss Steak ~ It's been a long time since we had this on the menu since beef is so expensive. It will be a welcome addition to our meals this week. 


Broccoli Cheese Soup and Hot Ham & Cheese Sandwiches. This was on the menu for Sunday (yesterday). We have enough soup left to have for lunches for several days this week. 


Bean & Cheese Enchiladas or Cheese Enchiladas ~ A family favorite, tried and true.

Sausage Cornbread Stuffing Bake - This will be a new recipe I am gong to try this week. loosely based on several recipes I've seen and I have the ingredients on hand and want to use those up.

Broccoli Cheese Soup

1/2 a bunch or 10 ounces Broccoli
3 Tablespoons Butter
3 Tablespoons Flour
4 cups milk
4 to 6 slices American Cheese (about 4 ounces)
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup shredded cheddar cheese

Directions:

Steam broccoli and cut florets into bite-sized pieces. 
Drain and set aside. 
Melt butter over medium heat and stir in flour. 
Cook for 2 to 3 minutes until bubbly. 
Add 1 cup milk and stir until smooth. 
Add remaining 3 cups of milk and cook, stirring constantly, for 7 to 10 minutes or until it just begins to boil. 
Reduce heat to low and add American cheese and stir until it is completely melted. Season with salt and pepper. 
Ladle into bowls and top each with cheddar cheese.

  1. Not feeling menu planning here either. bleh. I love broccoli cheese soup too! I've got chicken broth from a roaster I boiled that needs using so I'll probably do chicken and dumplings one night when it's colder and I made Hubs spaghetti and meatballs last night so only 5 more dinners to plan....it might as well be 100 dinners as far as I'm concerned. lol

  2. Great menu Belinda. I've heard several people say that Aldi chicken is good. Let me know how you like it. I usually don't buy things like that, but it's nice to have a few quick and easy things in the freezer.

  3. I've had the red bag chicken. I won't comment since I will be interested in your opinion. I've heard both good and bad about it and people compare it to chick-fil-A. I've never had their chicken sandwich so I have no idea if it tastes the same.

  4. I will go ahead and tell you, everyone in my family loves the Red Bag Chicken. Since Chik fil A is very close to our house we are very familiar with the taste. If you have an air fryer I would recommend using it to cook the chicken, because it does a great job of crisping it.
    I love broccoli cheese soup too!
    I hope you will let us know your thoughts on the sausage/stuffing recipe.

  5. Your meals sound good! I have been so uninspired lately. Looking forward to warmer weather and grilling out. I think everything tastes better grilled esp if I don't have to cook it. ;) I think tonight is going to be chili though since it is so cold here. Your broccoli cheese soup sounds so good, but I need to pick up some more cheese. Cheese makes everything better...that and chocolate...oh and peanut butter...just give me a reese's.

    1. LOL, I hear you on the Reese's, Kathy. That combination is so good.

      Anything grilled sounds good right now and refreshing. A lovely grilled chicken salad on a bed of salad greens would be good right now.

      Now I am getting hungry lol

  7. My menus will be changing as the weeks go by. I am trying to eat the ready made meals I made first and then will see what I feel like making.

  8. I love broccoli cheese soup, so maybe I'll put that on the menu. I've been using a discount on both Hello Fresh & Blue Apron to lazily get through the last month without meal planning. SO lazy, but wonderful, because my youngest will also usually do the cooking. It's been a nice COVID break, but one is up this week, and the other next week, so I should get planning!
