Blustery Fall Days & Soup

Blustery, cold fall days make a hot bowl of soup very appealing.  It’s great comfort food and easy to fill with healthy ingredients. Serving a bowl or cup of soup along with your choice of bread or sandwich several times per month really helps to stretch your grocery budget. 

When money’s tight, adding one or two of these recipes to your meal plan each month will help save money on your grocery bill. When you take the time to make soup yourself you will definitely be saving money.

Soup is also a wonderful resource for using up leftovers. Chop up leftover chicken, hamburger, ham or roast. Start by sauteing an onion and any other vegetables you have on hand and you have the beginnings for a great pot of soup.

  2. Chili, beef stew (slow cooker with leftover Sunday roast beef), apple cabbage soup, chicken tortilla soup, and the good old "It's-approaching-5p.m.-and-I-don't-know-what-to-fix" tuna cheddar chowder from "The Tightwad Gazette."
    Personally, I don't like soup very much at all, (not sure why) but these I can enjoy.

  3. I love all soups, but my favorites are probably chili and vegetable beef. I love beef stew as well!!

  4. I call it pasta fagiole but its just a basic use it up kind of soup with beans a pasta as stretchers. Wild rice is our favorite, but with a ham bone, bean and ham is the best.

    1. Those all sound good too, Sam. I've made the pasta fagioli before and enjoyed it. My Dad always likes wild rice in the dressing for Thanksgiving. I enjoy wild rice as a side dish too. Any soup with beans and ham is going to be good too. :)

  5. These all sound great. I also love butternut squash soup, which is good if you are feeding anyone with food allergies/issues, and is pretty low cal

  6. I try to copy my mom's recipe for homemade bean soup. It's close,but hers was always better.

    1. My grandmother was a good cook like your mother, Lisa. She worked tirelessly in her kitchen while working full time at Pepperidge Farm and loved every minute she spent in her kitchen.

  7. Your soups sound delicious. I'm a true believer in hearty soups, and yes, they help stretch the budget.
    I like hamburger vegetable soup, and pea and ham.

  8. When my husband does any meat on the smoker, I save the bones and make a lovely smoky stock and add while beans, kale or collards, carrots, and onions. This is great on it's own or with the addition of smoked sausage, pulled pork, or chicken. Serve with crusty bread.

  10. I love all soups except for split pea. TheHub really likes it, but since I do the cooking he has to eat it when he goes out for lunch.
