My Frugal Kitchen: What We Ate This Week

Here is a list of what I planned on making for dinner this past week:  

1. Pork Roast with Vegetables
2. Ham Pot Pie
3. Cheesy Potatoes
4. Baked Potatoes & Broccoli
5. Korean Pork
6. Hot Italian Sandwiches & Homemade Fries
7. Tacos

Sides This Week:
1. Pasta Salad
2. Cranberry Salad
3. Cucumber Salad

And here is what we actually made this week:

Sunday: My daughter picked up a pork roast on markdown for $3.99 this week, which included potatoes, carrots, celery, and onions. So that's what we are having for Sunday dinner. I also made some gravy, steamed some yellow squash, and made a gallon of fresh iced tea and go with this.
 
Monday: We definitely had pork roast leftover from Sunday, and I made sure to keep the gravy I'd made from the pan drippings. So on Monday I mixed the roast and with a bit of gravy. I also made mashed potatoes to go with this and had gravy for those as well. Sides were mixed vegetables, sliced cucumbers and tomatoes, and as always fresh iced tea. 

Tuesday: We like to make Tuesdays in our home family movie night. We want to see Toy Story 4 soon, so we re-watched the original Toy Story movie on this night.We had homemade pizza and I made individual salads to go with the pizza. 

Wednesday: One of my friends gave us some pork taco meat she had made recently. We have plenty of tortillas shells in our freezer and had all the ingredients needed for tacos. Lettuce, tomato, onion, sour cream, cheese, jalapenos, taco sauce. Her taco meat was delicious. 

Thursday: This was the day my daughter found some marked down Cheddar Bacon Burgers at Ingle's, so she bought lettuce, onions, and tomatoes to go with them. She also bought some onion buns and I had bought a new jar of pickles on Tuesday, so we had all the fixings with these hamburgers. 

Friday: We thought a Ham Pot Pie would be really good to try. I substituted ham for chicken and used the recipe I normally use and it turned out really good. We will definitely be making this again. 

Saturday: My daughter found these large packages of larger sized pepperoni on markdown this week, so that went along well with our Hot Italian Sandwiches this week. I made some homemade french fries to go along with them. 

We didn't make the Korean Pork or the Cheesy Potatoes, but I still have all those ingredients on hand in the freezer, so I will make them another time.

What is Korean pork? I'm always looking for new recipes to try with pork. Since moving down to SC I've found that pork is so much cheaper than beef.

We do an at-home family movie night once or twice a week as well. I usually do homemade pizza (it takes two half sheet pans to feed my bunch these days) or nachos. Lately we've been watching the show, Smallville, as a family, so that has taken up a few weeks of movie nights. We ended up going to the drive-in near Monetta, SC to see Toy Story and the Live Action Aladdin, with friends. I'd never been to a drive-in. It was really reasonable too. $9 for over 13 and $5 for under, plus you can bring in your own food and drinks and each showing is a double feature.

Ooh my goodness, your dishes make my taste buds crave 😀
In this heatwave we have been eating salads and sandwiches, but I'm ready for a pot roast.

Oh yes, pork is definitely cheaper here than beef too. The Korean Pork comes from the Homestead Happening website.

Korean Marinade
1 cup sugar
1 cup soy sauce
1 cup water
½ large onion, sliced
2 to 3 cloves garlic, minced
1 t ginger
1 T lemon juice
1 to 2 T hot chile paste, (this optional and can be reduced or omitted depending on your “hot” preference in foods)

Mix all the sauce ingredients together and marinade your meat in it.
Cook at 375 for about 40 minutes (this time could vary depending on the type of meat you use.

Oh, that sounds like a lot of fun to go to the drive in and a good price too, Nichole. We still have a drive in theater here too, although they do close in the winter. We are doing the movie night tonight too and having the Dominoes pizza (thanks for the heads up on the 50% off deal). Can't wait. :)

I, too, try to plan what we will eat throughout the week, even if we don't eat each and every planned meal. Things come up or we have more leftovers than I thought we would. Your meals sound delicious! We always love a good roast.

I would have loved to have eaten at your house all week. It all sounds so good. I had some marked down hamburger patties that we made Salisbury steak with... cooked in the slow cooker while we at church. Rice, sweet peas, fried peaches (from a can) and biscuits.... it made a fine Sunday lunch. We ate several salads with grilled chicken on them during the week. I also got on a bean burrito kick... easy peasey and cheap.

I don't normally menu plan. Because I'm still at home I've been trying some new recipes and cooking more often than usual.

We had quite a few meals out, as we were on vacation. But, we also had: carnitas, steak, grilled sausage + leftovers of those. I made coleslaw & salad to go with everything each day.

We got home late from our flight today, so I defrosted kebabs, and made a quick caprese salad to go with it. I need to menu plan for the week ahead!

Thank you, DLL. We are the same way, we make plans, but may not eat every planned meal. We don't make many roasts around here, but always enjoy them when we do.

Thank you, Penny. That is so sweet of you. We love Salisbury steak here. I need to make that soon too. Your Sunday lunch sounds scrumptious. The fried peaches sound especially good. And frugal bean burritos are easy to make and cheap, can't beat that for sure. :)

Oh, we definitely eat out when we are on vacation. wouldn't want it any other way. Your meals sound delicious. You did good making dinner at home after a trip. Kudos to you!

DH and I seldom have foods prepared the same for any meal. My diet is limited for multiple health reasons, and DH is not expected to limit his food variety because of me. We have our own system to bulk prepare and freeze individual servings, which others probably do for a family.

Sounds like a good plan for your and your dh, Anna. We must do what works for each of us to make our plans work best for us. I know I have my little systems in place that work for me too. I hope you are both doing well. :)
