Frugal Friday

My Frugal Week

Last Friday we had to go to town to pick up my prescriptions. We also picked up a grocery order at Aldi for tortillas, lettuce, milk, almond milk, cheese,  eggs, bananas, buns, pickles, and Kirkwood Breaded Chicken Filets or as some people call it the "Aldi red bag chicken". Some people say it tastes just like Chic-fil-A, and I've been wanting to try it and find out if it does. 

Update ~ The red bag of chicken filets from Aldi are very similar to the Chick-fil-a chicken sandwiches. They were very tender and flavorful and we enjoyed them and will buy them again.  The bag costs $6.59 and there were six breasts in the bag, so $1.10 each, which makes them cheaper to make at home than to buy at Chick-fil-a. 

What a difference one year makes. Our local county clerks office did not accept debit cards before the pandemic hit. You couldn't pay your license plate renewal online either. Yesterday my renewal came in the mail and I was able to go online and pay it. That is one change from the pandemic that I like. :)

In the past I've mentioned that our stove tops two big (8 inch) burners were not working, which is why I have not been canning the last few years.  I've tried to fix them myself using items my Dad gave me from a friend who worked for Whirlpool in their oven manufacturing plant, but that didn't work. 


For some reason it occurred to me last week that perhaps the elements were bad. I initially assumed they were OK since my Dad's friend got them from Whirlpool. So, I decided to order one new element just to try it out. I didn't want to be stuck with two in case that wasn't the problem.

The new element arrived on Sunday from FedEx and I promptly tried it out. The first burner still did not work, so I tried the second burner and voila, it worked! I was so excited and a little mad at myself  for not realizing this years earlier. I mean I have been without these burners for over five years. And I have seriously thought about buying a new stove top for this reason. Ugh!

Earning Money

My income tax refund check came over the weekend and I paid towards medical debt with it, so it was put to good use. 

Avoiding Spending

We stayed home this week and did not spend any money on groceries or necessities. It seemed odd not to have any packages coming this week. 

I did not spend my income tax refund on anything that I wanted, but rather put it to good use. Do you remember when Frugal Queen was paying off her debt and she would write about getting paid and paying her bills and leaving only enough money for groceries? She inspired so many people with her actions and encouraged them to tackle their own debt.
“It meant living on £57 a week instead of £500. The budget had to cover food, bills and other necessities,” says Jane 46. “Treats such as wine and takeaways had to go.” Frugal Queen
If you have debt, consider it a flaming emergency and get it paid off as quickly as possible. Don't be like my parents and go into retirement mired in debt. In fact if you are in debt, I would encourage you to read this article at Mr. Money Mustache regularly to keep you motivated to pay it off as quickly as possible. 

Saving Money In My Frugal Kitchen

I used some leftover rice from dinner the night before to make rice and cheese for breakfast one morning, so no food waste. 


Another night I made Mexican Rice for dinner and the next day I divided it up into five different containers, labeled those, and stuck them in the freezer. Now when we want a side dish of rice, all I have to do is pull one from the freezer. 


I save all of my parmesan cheese containers as they make good storage containers for spices and the lids will even fit on a mason jar.


We found a local farm that is selling pork products, so we bought five pounds of sausage to try from him. I'm excited to have someone local who I can trust. 


The first morning after I bought it, I made sausage gravy for breakfast. I served this with biscuits and scrambled eggs. 


I made a batch of cookies this week. This is the recipe Bailey found on TikTok and really likes to make. It makes about a dozen cookies, so not too many, which makes it an easy recipe. 

Peanut Butter Chocolate Chip Cookies

Ingredients:

1 cup brown sugar
1 cup peanut butter
1 egg
1 teaspoon baking soda
1/2 cup chocolate chips

Directions:

Mix all ingredients well together. 
Drop spoonful onto parchment lined cookie sheet. 
Bake at 350 degrees for 8 to 10 minutes. 


Finally, I made some cheddar muffins this week. This is a good recipe to use for when you have leftover mashed potatoes. I didn't have any, so I used one pouch of Instant mashed potatoes instead. 

Bailey doesn't care for the Instant mashed potatoes normally, and I have several pouches to use up. She really liked these though and so did I, so I'm tickled to find a way to use those up in a way that we both enjoy. 

Cheddar Muffins

Ingredients:

2 cups mashed potatoes
1 egg
1/3 cup vegetable oil
1 cup shredded cheddar cheese
1 & 2/3 cups flour
2 Tablespoons diced chives
1 Tablespoon dried parsley
1 Tablespoon baking powder
1 teaspoon salt

Directions:

Combine beaten egg, cheese, vegetable oil and mashed potatoes.
Combine remaining ingredients & stir in potato mixture just until moistened.
Fill muffin cups 3/4 full.
Bake at 400° for 20 - 25 minutes.

This week for movie night we watched, The Lost Husband. Both Bailey and I thought the movie dragged a little bit in the middle, but then a surprise ending happened, which redeemed the movie for me.

Frugal Friday ~ April 9, 2020 ~ Chocolate Zucchini Bread Recipe Included!

Good Friday morning to all my readers. Fridays are normally exciting for me since they mark the end of the work week. Exactly four weeks ago today, on March 13, was the last day I worked.  

We have sheltered in place for the last 28 days due to COVID-19. 

We are not sure how long this new normal will last, but hopefully we will come out on the other side in a better position than when we started. 

I read an article today on the AP website about how we are revisiting forgotten household skills

For my own household that has been true. In fact, as long as I've been on my frugal journey, I've found ways to save money this week that I hadn't always realized before this started.

I'd say it has a lot to do with having to stay home, which forces us to use what we have here and to make do with what we have on hand. 

I can recall my grandfather telling me they ate cornbread made with water during the Great Depression. After staying home for four weeks, now I realize why they would do that, and have actually thought about what alternative we could use for our buttermilk in our cornbread. I hadn't really stopped to think that this generation would have to think about things like that.  

We normally buy our bread at the bread outlet inexpensively compared to the grocery store prices. But, we are not going to any stores, and although I've made bread several times over the years, I realize that now I'm going to have to make it for real if we want bread to eat. 

LOL, I am up to the challenge. :)

This new way of life has given me a lot to think about and a new mindset, a more frugal can-do attitude that is forcing me to be even more frugal. 

So this week we have eaten all of our meals from home and they were seriously cooked from scratch. These days I'm thinking about how I handle food in the kitchen. 

I believe I've used more flour these last four weeks than I have in the last year. Now I find myself thinking about having to ration what I have left. 

I'm cutting back and using less, so I can make our food stretch as far as possible. And even though I have done that in the past this time feels different. There is a real purpose/urgency  behind this more so than any other time I can recall. 

This week for the first time I put a container in my freezer to hold small amounts of leftovers to turn into soup in the future. I have never done the soup container in the freezer before this. 

I was creative in the kitchen before this started, but these days I find myself trying to think of and create meals like I've not done before. We are using everything we have and like Frugal Queen told me once, "now eat all of that and don't go to the grocery store again until it's all gone."

Non-Frugal Things We Did This Week

This week I switched one of my prescriptions to mail order via CVS. And although I ended up paying more for it, it was worth it to me since we are sheltering in place. 

Items We Bought This Week:


We purchased this box of 96 toilet paper rolls for 50¢ each, but now the company website has been taken down and is no longer available. 

We bought ten pounds of white popcorn from Blain's Farm & Fleet. At $1.99 for two pounds I considered this a good deal. 

How we Entertained Ourselves:

We played board games this week. One of them was Ticket to Ride. 


In My Frugal Kitchen this Week:


Ever since I moved to a more plant based diet I do not drink dairy milk, but rather use plant based milk. I was out this week, but realized that I had pecans in my freezer, so using my Vita-mix enabled me to make my own nut milk.

I cleaned out all the Tupperware bowls and lids. I have done this before, but today I went thru all those lids that no longer fit the bowls. 

They should come with a disclaimer that Tupperware lids will shrink if not used for a long time. I've read that running one under hot water or leaving it in the sun will help it fit better. 

I've also read that apparently certain Tupperware is considered dangerous to store food now, but using them for other uses would be OK. 

When my daughter made homemade wipes this week she stored them in one of our old Tupperware bowls. If you missed that blog post you can read about it here


On Thursday I took the four zucchini I had from Misfits Market and grated them. I used some of it to make these two loaves of chocolate zucchini bread. I still have one cup left, so I saved it and will add it to something else I make this week. 

Here's the recipe in case you're interested:

Chocolate Zucchini Bread

Ingredients

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Directions

In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. 
Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder. 
Beat into sugar mixture until blended. 
Stir in zucchini. 
Transfer to two  loaf pans coated with cooking spray.
Bake at 350° for 50-55 minutes or until a toothpick comes out clean. 
Cool for 10 minutes before removing from pans to wire racks to cool completely.

Missing Frugal Queen?

It's been a busy two weeks here and I ended up working nine of the last ten school days. Payday came early this month and I've already paid the monthly bills, which always gives me peace of mind. 

Last week I sold three things on Ebay that netted $36.83 after fees for the items that cost me $1.24 at a thrift store and rummage sale. 

We've been in use it up mode here using several items out of the pantry that are good to get off the shelf.   It's so important to use up what you have stored in your pantry because it saves you money because then you don't have to buy more food. That will free up money for other things like an unexpected expense. 

With that in mind, I would like to share a link with you. 

Better Times Almanac

I've shared this link before, but it's been a while. There is a lot of good, useful, and frugal information there. Bob advises people to keep two months worth of food in their pantries. 

He says...

If hard times come your way -- if you get fired, get sick, there's a blizzard, your utility bills are too high, whatever the crisis, with food in the pantry, hard times are less hard. 

One way we do this is our home is to get the Wednesday grocery store sale ads and find out what is on sale that week. Food City has begun to have Friday only sales or three day only sales, so we went yesterday and picked up four packages of sausage, bacon, and cream cheese. 


These were good prices for our area and I've already put the bacon and sausage in the freezer. Bacon is a rare treat in our home, due to the expense, so I was tickled to find it at this price. BLT's will be on the menu sometime soon. 

It's cold here this weekend, so I'll be making soup today. I have plenty of ingredients on hand from shopping the sales and stocking up on them.
