Baked Potato Bar


Dinner tonight is a Baked Potato Bar.  


The last bag of potatoes I bought came from Sam's Club in the 15 pound bag for $7.32. There were 14 potatoes in the bag, which made each one 52¢. 


I can pick up a large container of sour cream for $1.96 and a bag of broccoli for $1.00, and even add some turkey bacon for $1.00 if I wanted that. 


My idea of a perfect baked potato is sour cream and broccoli. 


Either way this makes a great, affordable meal.

  1. Mmmm, that looks yummy! I haven't done baked potatoes in a while. We'll typically substitute kale for the broccoli, as that's what our garden produces the most of. And I often make a cheese sauce to smoother the kale in (hides any bitter taste).

    Have you tried baked potatoes with chili on top? We did those once last winter and they were surprisingly good. I thought it would be an odd pairing, but quite tasty, actually.

    Now I have to think up something for our dinner tonight!

    1. We get these stuffed potatoes at the fair every year and they have chili in them, and I have taken chili from Wendy's and put it on a baked potato, and it's good too. I don't think I've done it at home, but always had it in the back of my mind. :) The Kale sounds good and is sooo healthy for you! :)

  2. I love baked potatoes with chili. I like sour cream, too. :-)

    I even bought a can of low sodium chili just in case I need a quick meal for me when the others are eating something I don't need to eat.
