Saving Money in my Frugal Kitchen ~ Meal Plan Monday

                                  


My Frugal Week

This week I made more pickled beets because we enjoy them so much and they are very healthy. 

No recipe of the week this week, but did you see the Chocolate Hummus that Cheryl posted on her blog, Cheryl's Frugal Corner?  I can't wait to try it!


What’s for Dinner


Meatless Monday ~ Red Salmon, Green Beans with Onions, Cole Slaw.

Taco Tuesday ~ Movie Night! 

Wednesday ~ BBQ Pork Ribs, Hot Potato Salad, Green Beans with Onions. 

Thursday ~ Bailey had a book club meeting, so I made some taco meat we could both eat, and she had hers on the run.  

Friday ~ The last of the Taco Meat, Hot Potato Salad, Sugar Snap Peas. 

Saturday ~ Sausage Quiche, Potato Pancakes, Butter Beans, and Steamed Broccoli. 

Sunday ~ Chicken Stir Fry, which I loaded up with vegetables and then served Brussel Sprouts on the side. It's been too long since we had one and we both enjoyed it. 

What’s on the Menu for This Coming Week

These are the items we have on hand that I can use to make meals this week. 

Salmon, Sausage, Ground Beef, Chicken, and Pork Ribs. Please be sure to come back next week to see what min dishes and sides we serve with these proteins. 

We are serving two meatless meals this week to save money on meat.

  1. I'm glad you reminded me about the pickled beets in my fridge!

    A couple of months ago we bought five pound bags of restaurant taco meat for 3.99 each at the salvage store. After that we kept giving those big bags dirty looks on our freezer thinking why in the world did we buy those? Over the weekend we thawed one just enough to hack it into chunks and refreeze the smaller portions. We kept out one to try and WOW that taco meat is delicious! I also baked hamburger buns and made coleslaw for the week ahead.

  3. This week I am clearing bits and bobs out of the fridge and the fridge freezer. Things seem to have gotten away on me once again.

    1. I use the canned version of plain beets as they are inexpensive compared to canned pickled beets.

  5. Your meals sound good! I think I am going to put tacos on the menu, so thanks for the idea.
    Another week where there aren't any good sales, so I'm going to have to go mining for meat in the chest freezer. I think I am going to have to cook the "scraps" from when we bought 1/4 of a cow last year, but somehow liver and onions or oxtail stew just doesn't appeal to me right now. :D

    1. Thank you, Kathy. We love tacos here and have them regularly. I'm with you on the oxtail and liver not appealing to you. LOL But you could make a really nice vegetable soup with the oxtail, I think? It's chilly here, so that sounds good to me. :)
