Menu Plan Monday

Here is a menu that I have planned out for us to eat this week. I always hold my plans loosely as I don’t want to waste any food, so some meals I might not make due to having leftovers that need using up. You can always check my Frugal Friday post to see what we actually ate.

Chicken Fajitas, Red Peppers and Onions, Mexican Rice 

Hamburgers with Cheese, Lettuce, Pickles, Tomatoes and Onions, Pasta Salad

Sticky Pineapple Chicken, Rice, Steamed Broccoli.

 Tacos with Corn Tortillas, Cheddar Cheese, Lettuce, Onions, Tomatoes.

Italian Sausage Bake with Green Beans, Onions, and Potatoes.

Soup Beans, Turnip Greens, Cornbread 

Homemade Pizza, Salad

  1. Well with the evacuations we will have missionaries here on Wednesday (7 of them) and friends on Thursday so I had better start looking at the pantry....

  2. Sounds delicious! I love tacos, but we have them multiple times per month (it's one of the only meals everyone in my family will eat), so we're taking a break while the kids are out of town. ;-)

    We're having steak, salmon, coleslaw, lots of caprese salad, chicken sausages on the grill, and then eating out a bit more than normal as the kids are gone

  4. Sounds great! I still had plenty of the pasta salad left for our dinner this evening. I haven't had a chance to do my menu for the rest of the week yet, I need to get on that this evening. Have a great week!

  5. Tonight is sautéed scallops and grilled zucchini.

    Tomorrow is lasagna. I prepped it this morning and it simply needs 60m baking!

    Wednesday: Grilled salmon and more grilled zucchini.

    Thursday: Lasagna?

    Friday: up to my sister who is coming to help me as I'm having a knee replacement in the morning :-)

  7. Very fluid and flexible meals here. Last night was pulled chicken from freezer. I have odds and ends to use up so will be eating eclectic meals.

  8. We had the grandkids for a few days and have bee. Eating way too much junk, we are going to eat light with plenty of veggies and water!

  10. Monday, we had something that I have forgotten. Tuesday we had frozen meatballs from the freezer, jarred pasta sauce, and pasta. I added a can of mushrooms to my spaghetti since Tommy hates mushrooms. Added olive oil to mine. Oh, salad, too. Wednesday, I will bake chicken and that will be the protein for Thursday, Friday, and Saturday, at least. I will have some for lunches. There are vegetables here, so I can cook whatever we want for each dinner.
