Menu Plan Monday ~ Saving Money in my Frugal Kitchen ~ Week #1 April 2025


My Frugal Week

I took out the last package of bone-in chicken breast out of the freezer to thaw this week. I cooked those in the crockpot on Friday to have chicken for the weekend. 

And on Thursday I decided to do some grocery shopping. I went to Trader Joe's, Gordons Food Service, and Publix. I picked up olive oil, black olives, B1G1FREE light OG Italian dressing. 

I found a canister of Duncan Doughnuts coffee in the dollar bin. I couldn’t believe it as later that day I saw the same sized canister at Publix for $18.99. 

On Friday we stopped at UGO, Kroger, and Ingles. 

The best deals we found at UGO were cream cheese for $1.00, Cracker Barrel Cheese for $1.19, and Siggis Yogurt 3 for $1.00. The sell by dates were close on the yogurt, so I only bought six, but what a great deal as it normally sells for $1.69 and up. 

UGO had the Orgain protein drinks for $1.19 each. At Kroger they are $3.50 each, so I bought three boxes, which is 54 in all and will last me over two months. 

We bought five packages of chicken breast at Ingles on markdown for $3.99 each. 

At Kroger we used multiple coupons and sales and saved $16.74 with coupons. We also had $10 off our grocery order on out account for a survey we did, and also we had a coupon for a free bag of Iams cat food. 

 

What’s for Dinner

Monday ~ Beef Cube Steak in Gravy, Potato & Onion Bake, Green Beans & Onions. 

Movie Night Tuesday ~ It’s movie night for Bailey, so I had the night off from cooking. Bailey had homemade pizza and I had the vegetable soup I made on Sunday. 

Wednesday ~ I pulled one of the $2 Rotisserie Chickens out of the freezer for dinner. I pulled the chicken off the bone and chopped the meat up, seasoned with onions and taco seasoning mix.  Chicken Tacos for dinner and I had a side of the vegetable soup as well 

Thursday ~ Using more of the rotisserie chicken, I made a salad for dinner, but Bailey wanted chicken tacos again, so we both had what we wanted. I served it with fresh strawberries and radishes. 

Friday ~ I put the last package of bone in chicken breast in the crockpot. And I seasoned it with Kinders grilled chicken seasoning. We had it for dinner once we came home from grocery shopping that day. 

Saturday ~ Chicken Salads with all kinds of delicious add ins, my favorite type of meal. 

Sunday ~ Chicken Fajitas, Corn or Flour Tortillas, Red Peppers, Lettuce, Tomatoes, Red Onions, Black Olives, Chipotle Sauce, and Corn.

  1. I always learn so much from you, I’m surprised that I can share a great tip with you that you don’t seem to already know about. For yogurt, sour cream, etc..all you have to do is turn it upside down so the lid is on the bottom. This will kerp/preserve the dairy product & it will literally last months past the due date. Why? Because the inky reason it goes bad so quickly is because air gets to it when it sits up right. But when you store it upside down, air it creates a seal & air cannot get in to make it go bad(as quickly). So ho back & buy alot more of those yogurts & store them upside down. They will still good & taste just fine too. I would assume it would work on cottage cheese also. I’ve tried it with sour cream & yogurt & I know for certain that it works st least for up to 2 months past the expiration date.

    1. Thank you so much. I did know that tip for cottage cheese, but didn’t know it would work on yogurt too! I love that, thank you so much! I’ll go today and get some more. 😊 That is what I love about out little community here. We can learn from each other and save money. 💕 💕

  3. What a deal on the coffee and cream cheese. I like to freeze yogurt - it makes great fun - like eating a frozen pop. You can even stick in a popsicle stick and freeze on a pan - when ready to eat - you have the stick already inserted.

  4. Hubs is so jealous about your coffee find as he loves Dunkin Donuts coffee. Great Finds! I have found that dairy lasts way past "expiration" dates listed.

  5. Sounds like a tasty week! Great deals at the grocery store!! I think my best deal was Food City had pork chops for .99/lb on Friday and Saturday. I cooked some chicken in the crockpot too, and turned it into sliders and a casserole another day.

  8. Look at all the great bargains you found. I am trying to stretch the days between shopping trips as a way to save some cash. I made some more yogurt yesterday and love the fact that I can save money doing so. Never get the sales that you do here in my small Canadian city.

  9. Lucky you on the Dunky coffee!! We have recently discovered Ingles own brand of Italian dressing. It is the best Italian we have ever had and it was 2/$3 this week. It goes lower but we were out. Our big deal of the week was 4 bags of Viola frozen bag meals for 5.18 total. They are not our favorite thing to eat but they do come in handy when we just can't get a meal together.

    1. There is a certain Voila meal that Bailey really likes too. What a great deal you found on those. I’ll have to try the Ingles Italian dressing as that is a great price.
