Menu Plan Monday ~ Saving Money in My Frugal Kitchen Week #4 January 2025

 


My Frugal Week

One thing I loved about my Mom is no matter what I made in the kitchen, I could always count on her to eat any leftovers. If I made something that I didn't care for, Mom would eat it. Now I can count on Bailey to do that too. It makes it so much easier to not waste any food. 

During my recovery from knee surgery I wasn’t allowed to drive since it was my right knee that was replaced. So, we didn’t do much grocery shopping at all, but rather used our pantry and freezer to make meals. As a result, our freezer has had a real thorough clean out. It’s amazing how many meals we’ve been able to make and yet I still have a list of meals we can make. 

This week’s Pantry Additions:

5 pounds Idaho Potatoes
10 cans Luck’s Chili Beans
Half gallon Almond Breeze almond milk

What’s for Dinner


Monday & Tuesday  ~ Honey Baked Ham & Soup Beans, Stir Fry Vegetable & Cornbread. I used my last Honey Baked ham bone for this dinner and used soup beans (great northern) to cook with it. I had stir fry vegetables left from Sunday Dinner and made cornbread to go alongside. 

Wednesday ~ BBQ Pork Chops, Hot Potato Salad, Green Peas. 

Thursday ~ Turkey Polish Sausage, Baked Sweet Potatoes, and Steamed Broccoli. 

Fish on Friday ~ Salmon Patties, Roasted Sweet Potatoes, Green Beans with Onions. 

Saturday ~ Grilled Chicken, Green Beans & Onions, Corn, Grape Tomatoes. 

Sunday ~ 

What’s on the Menu for This Coming Week

We regularly serve one or two meatless bean based meals each week in order to money on meat.

  1. I never think of salmon patties and I know I have at least on can of it in the pantry. I am not a huge fan of them, but TheHub really does like them. I might change one of my meals that I planned for the week to those. Thanks for nan option I did not think of.
    After a week of eating a lot of soup for meals, TheHub is requesting "real" food. We are still going to have at least one soup meal because I have a lot of bean soup still in the fridge. Other than that we are eating what is on hand. My freezer is still overly full, so we have all kinds of options.

    1. It’s so great to have a full pantry to choose from each day. Even though we made a dent in ours there are still plenty of meals to be made here. I have multiple cans of salmon here as we really enjoy them. Bean soup sounds wonderful to me.

  2. Did a big batch cook this past weekend so there are lots of options ready in the fridge and freezer. I had a high protein breakfast this morning so lunch is a broccoli and cauliflower bake with cheese sauce and there will be some yogurt and berries for dessert and then some HM soup for a light supper - trying to watch the calories.
    The next 3 days I eat my main meal about mid-afternoon when I get in from my mornings at the office and I will have a big salad with quinoa and a different protein each day - there are cooked chicken thighs - a couple of slices of a pork roast that I cooked yesterday and then Thursday it can be tuna or sardines.
    Friday will be a very light eating day as I am eating both lunch and dinner out at restaurants on Saturday with two different sets of friends (just the way it has worked out). There will be soup for a light supper each day.

    1. That all sounds so good, Margie. I used to eat my big meal in the afternoon and then a light supper and it’s the way I prefer it, but Bailey gets hungry at night if I do that, so she likes her big meal around 5 each day. Soup for a light evening meals sounds terrific.

  3. Glad that you had a good pantry so you didn't have to worry about going to the store. Your meals sound tasty! An.d I know the ham and beans sure tasted good these cold days. I bought the beans on sale at Food City too. There aren't many good sales anymore.
    My meals last week weren't too memorable. I know I fixed chili , and I turned the leftover chili into nachos the next day. I fixed breakfast for dinner since I really didn't want to cook, so that was easy.

    1. Thanks, Kathy. I like breakfast for dinner too. It’s so delicious. Good deal on the beans, they even had white chili beans this time around, so I got a couple to try them out. This is perfect chili weather. I’d say your nachos the next day were delicious and a huge hit! I love nachos. 😋

  5. I made salmon patties a couple weeks ago and froze half as an experiment. I hope they heat up well in the air fryer. I never make them because of the leftovers which we don't want right away.

    Hubby told me 'Do Not Buy' any more chili beans! Seriously I cannot get down the stairs to the garage where we store canned goods so I did not know we have at least 24 of both regular and white Luck's. The thing is that Ingles puts them on sale for 3/$1 and the Luck's site pretty much always has a $1/4 coupon and I print two. So there you go to get them for 8 cents a can. Really no matter the deal we have enough, enough, enough!

    1. Oh my goodness, those are such great tips, thank you. I’ll have to check them out. That is a very nice problem to have, too many chili beans. I’ve done the salmon Pattie’s frozen before. They are not the same as freshly made, but Bailey will eat them, which is good. I’m not a fan of them after being frozen, but I will eat them, but totally get what you’re saying too.

  6. Your meals always sound yummy! I wanted you to know that I "needed" (lol) chocolate syrup this week but never tried making it but remembered you had a recipe, looked it up here and made it. Came out perfect, so thanks! Have a great week!

  7. My Glen was the same way - he ate all my leftovers, and never complained! Now I have to eat them or freeze them.
    Our pantries sure are nice to have.

  8. I will be having a salmon casserole this coming Friday for a change from patties.

  9. Your meals look delicious. I tried the slow cooker chicken satay tonight & it was a huge hit. Highly recommend, if you like Thai flavors. (Hawaii Planner)

  11. I still have not made the salmon croquettes that I have been planning on making for several months! I really want them. But, something always comes up. I could eat the whole can of salmon by itself. Or, once made, I could eat all the croquettes in one sitting. But, I don't. I don't like them baked even though they are better for me than fried.

    1. Yes, they are better than frying them, but I always fry mine because they taste so good. I just use about one tablespoon of olive oil, so it doesn't add too many calories and that is about the only fried food I eat these days.
