My Frugal Week
On Monday I stopped in at Gordon’s for a curbside pickup of black olives. I find their prices to be rather high lately except for the black olives, so I removed the temptation of impulse shopping.
On Sunday I made six gelatin and fruit cups using orange gelatin and mandarin oranges. I also made a Chicken Tortilla Soup for dinner using up several cans of food from the pantry such as corn, beans, and tomatoes. I also used up several items from the fridge such as the lingering bowls of red peppers, tomatoes, and black olives.
What’s for Dinner
Monday ~ Teriyaki Chicken, Fried Rice, Stir Fried Vegetables of Broccoli, Cabbage, Carrots, and Zucchini.
Tuesday ~ Baked Potatoes with Cheese, Tomatoes, & Black Olives.
Wednesday ~ Chicken Fajitas, Red Peppers, Onions, Romaine Lettuce, Corn, Flour or Corn Tortillas.
Thursday ~ Baked Potatoes with Cheese & Black Olives.
Friday ~ Mexican Grilled Chicken, Chopped Tomatoes, Salad.
Saturday ~ Grilled Chicken Burrito Bowls.
Souper Sunday ~ Chicken Tortilla Soup

Delete(Little Penpen) your menu for the week sounds good. We eat way too much hamburger around here. I need to look up some of those chicken recipes.

ReplyDeleteI love me a good baked potato. When my husband and I were first dating, we didn't have much money. I would always order the baked potato at Wendys since I think it was only a $1 back then. He thought I just really loved potatoes which I do, but it was also the cheapest thing on the menu. :D
Thank you, Kathy. I love baked potatoes with cheese on them. It’s a meal by itself. And I remember the $1.00 baked potatoes from Wendy’s. They were a bargain!

DeleteYour baked potatoes with cheese and olives reminded me that back in the '90s, we had a little restaurant in our downtown that made Baked Potato Sundaes. They were so good, they would split the potato, add shredded cheese and bacon bits, then top with a big scoop of sour cream and put the black olive on top so it really looked like a sundae! Thanks for triggering such a fun memory.
ReplyDeleteBobbi, those sound delicious! I would love to try one of those. Years ago when I worked at the hospital, there was a small cafe that sold giant baked potatoes for 99 cents. It was a great and affordable lunch back then.
