My Frugal Week
Rather than throwing them away, we’ve been feeding some of our food scraps to the chickens, and they love them! Tomato ends and strawberry tops are some of their favorite scraps. So far we’ve collected 156 eggs from them.
Bailey set up a Mother’s Day tea for both of us this past Sunday. She made tomato sandwiches, strawberries, and cheese spread with hummus crackers. I had blueberry tea and then an orange roobios tea from Trader Joe’s. It was such a nice and relaxing way to spend part of the day.
On Tuesday I went to town to run a few errands and went to Walmart to buy a few groceries.

Saving Money In My Frugal Kitchen
One way I saved money in the kitchen this week was by using up some leftovers to make chili for lunch one day.
One leftover hamburger became the inspiration for this lunch. Other leftovers from the fridge included part of a diced onion, one corn on the cob, some salsa and queso left from the Mexican restaurant. From the pantry I added one can of fire roasted tomatoes and a can of kidney beans along with some spices.
This not only fed us for lunch that day, but also for dinner and lunch the next day. It was a real money stretcher.

Chicken Fajitas, Mexican Rice, Salad. Grilled Steak, Butter & Herb Rice, Green Beans with Onions, Sliced Oranges.Hamburgers with Cheese, Tomatoes, Red Onions, Tater Tots, Corn on the Cob. Meatballs in Brown Gravy, Soup Beans, Roasted Vegetables. Veered off menu to use up some leftovers, so dinner was BBQ Pork, Roasted Vegetables, Soup Beans, Corn on the Cob, and Cucumber Salad. Chili, Corn on the Cob, along with a salad.

The Mother's Day tea sounds absolutely lovely. My daughter brought her electric mower over and is mowing for me. I'm going to make a sort of chili Mac using up some black bean and corn salsa from earlier in the week. I need to rein in food waste and this will be a nice meal we'll all enjoy as it's vegan, but can have cheese added if I or my younger daughter prefer.

ReplyDeleteGreat job using the leftover hamburger to make yummy chili. Your meals sound so good. I think that I am going to grill some hamburgers and hot dogs this weekend. I love cooking once and not having to cook the next day. :)

Thank you, Kathy. Those teacups were a special offering as a promotion by Red Robin at one time. There were all kinds of them made with different facial expressions and are available online at various places like eBay and Etsy. We have several of them as we think they are so cute. Hamburgers and hotdogs sound delicious. And I’m like you I like cooking 9th e and eating for a couple of days on it. 😊 I hope you have a terrific weekend.
DeleteYour Mother's Day tea treat sounds lovely. It reminds me of when I was a kid as we always had tea time on Sundays. I didn't know Trader Joe's has their own Rooibos tea blend. Rooibos (translates to red bush) tea comes from South Africa. It actually has medicinal properties. If you liked the Trader Joe's one, you should definitely try the original. I'd be happy to send you some if I'm able to find it at the SA food shops here. Hope you & Bailey have a wonderful weekend!

ReplyDeleteGotta love money stretching meals. If anyone saw my lunches they would just shake their heads and walk away. If it is leftover, it becomes lunch and since I save all the bits and pieces of everything I might have a tablespoon of collards topped with some squash or something equally unappetizing like that.

DeleteIt's satisfying to recycle your food scraps into eggs. The Mother's Day tea sounds so nice. With our smaller family, I end up with leftover taco meat. Sometimes I freeze it, but sometimes I turn it into Taco Soup. 1/2 lb taco meat, 1 can corn-drained, 1 can diced tomatoes, 1 can beef broth, 1 can kidney beans-rinsed and drained. I put it all in the crock pot in the morning and by dinner it is ready to serve with tortilla chips and cheese.

It’s a great money saver too. I like your idea of using your crockpot too as dinner is ready whenever you’re ready to eat. Yum . 😋
