Meal planning is an good tool for saving money, time, energy, and stress.
Here is what I'm planning for this week, sides to be determined later:
1. Macaroni and Cheese with Ham, Salad
2. Big Mac Sloppy Joes
3. Vegetable Lasagna, Salad
4. Chicken Parmesan
5. Chili
6. Grilled Chicken Salads
7. Grilled Salmon, Salad
As always these plans are held loosely. They could change based on my energy level that day or any other circumstance. But it is nice to have some type of plan for the week.

Big Mac Sloppy Joes:
Ingredients:
1.5 pounds ground beef
1 small onion, chopped
salt & pepper to taste
1 cup Great value secret sauce, or you can use Thousand Island dressing
5-10 hamburger dill pickles chopped, and more for later
Hamburger buns
Cheese
Cook and drain the ground beef with the onion. Add the salt, pepper, secret sauce, and chopped pickles. Assemble the sandwiches by spreading more of the secret sauce on the top and bottom buns. Then the cheese, lettuce, meat mixture, another bottom bun here if you want and repeat the layers, or you can just add more lettuce, pickles, and the top bun here.
At our place this week, we're having homemade burgers, chicken stir fry, fajitas, quiche and salad, pizza and salad, lasagne and salad. Now the weather is really warmimg up here, salads will be on menu plan a lot!

DeleteThose Big Mac sloppy joes sound great. Thanks for the recipe. We will try that. I made a large batch of chicken curry this week, and we'll have that & maybe a grilled chicken dish this week. My son cooked on Friday/Sunday & Monday, so those dishes were all super tasty. Now we just have to plug in the gaps.

There are so many recipes online for Big Mac Sauce, you may have the ingredients at home to make your own. It was a really good recipe. We will definitely make them again.
DeleteI don’t do menu planning. Maybe I should. Now I sort of plan what to eat on my busiest work days - Monday and Wednesday. I usually eat leftovers.
