Fluffy Baked Omelet




This recipe came from my high school home economics teacher, Mrs. Cimo. We made this during my senior year of high school in 1985. 

She had us use a can of Hormel ham for the ham portion of the recipe. 


I made this for breakfast this morning and it was as good as I remember it being back then. My daughter really liked it too. 

Here is the recipe if you're interested:

Fluffy Baked Omelet

Ingredients:

6 eggs, separated
¼ cup cornstarch
⅓ cup water
1 teaspoon salt
½ teaspoon Tabasco sauce
1 cup chopped ham
1 cup cheddar cheese
Optional: mushrooms, onions, green peppers. 
2 tablespoons butter

Directions:

Beat egg whites until stiff but not dry. 
Quickly beat egg yolks with remaining ingredients. 
Fold into beaten egg whites. 
Heat 2 tablespoons butter in a skillet. 
Pour in omelet mixture. 
Cook over low heat until lightly browned on bottom, about 5 minutes. 
Finish cooking in the oven. 
15 minutes at 350 degrees.
Loosen omelet, cut and serve.

  1. I am pretty sure I learned how to make a fluffy omelette in home ec as well. That was also where the basic hotdish reciepe cem form, though in the Tightwad Gazette books she writes the same more or less. A starch, a protein, a binder, and a topping-and if you want a vegetable and a "goodie".

    1. Those were great classes we took in Home Ec. Those classes today are nothing like we took back then. I learned to sew real clothes in class and made several outfits for myself and my niece. I remember the basic hotdish too. Those were good times. :)

  5. I had not thought of Home Ec in a long time. I had it in Jr.high and really did like the cooking part, but I hated sewing. It is still not one of my favorite things to do.

    1. I really liked the sewing part and took three years of it and not as many food classes. I really wish now I had taken the cake decorating classes, but I guess in the end the sewing has helped me more down through the years.
