In My Frugal Kitchen This Week

Here is what I planned for dinner last week:

1. Tacos
2. Teriyaki Chicken
3. Meatloaf
4. Spaghetti
5. Beans, Greens, & Potatoes
6. Grilled Chicken
7. Smoked Sausage

Sunday: Having picked up lettuce and cheddar cheese I knew I had the makings for Tacos, which is one of my favorite meals, so that's what I made. I also made another gallon of tea as it is hot here.

Monday: I put some smoked sausage in the refrigerator to thaw today. I think I'll serve that with mashed potatoes and green beans.

Tuesday: We had multiple errands to run on Tuesday and ended up eating dinner later than usual. In fact it was so late that we combined our movie night with a buffet type dinner. We ended up with a pizza, chips and dip, cherries and cantaloupe.

Wednesday: For the life of me I cannot recall what we had for dinner on Thursday. Oops. 

Thursday: The last corned beef was pulled out of the freezer to cook today. I placed it in the Instant Pot and cooked it. I served it with green beans with onions and potatoes.

Friday: I pulled some Italian Sausage out of the freezer to thaw. I have one jar of spaghetti sauce on hand, a loaf of Italian bread bought on mark down for 36¢, and some broccoli from the freezer. I don't have any Parmesan cheese on hand, but do have a couple of packets from somewhere we can used if wanted.

Saturday: I had plenty of leftovers in the refrigerator for dinner on Saturday ,so there was no need to make more food. There was a choice spaghetti, corned beef, and green beans with potatoes.

As you can see we didn't always stay true to our menu. Here is a list of possible menu ideas we could have next week.

  1. Last night we had grilled hot dogs & salmon (kids v adults) & tonight we will have burgers on the barbecue. The weather is beautiful. I'll make crockpot carnitas on Monday, and we'll eat leftovers of those meals for the rest of the week. We'll eat at my parents house on Friday, after what I hope is a reasonably painless 12+ hour drive.

    I don’t plan my meals, because I don’t mind eating the same thing again the next day. (Actually, the ma in reason is I’m too lazy to cook every day. Heheee).

  4. We usually have a leftover night, too. It's a good time to use up all the bits and pieces left over and helps me to clean out the refrigerator before going to the grocery store again. This week it's hamburgers, chicken thighs on the grill, ham and beans, spaghetti and meatballs, and fish that my husband cooked last weekend. Have a great week!

  5. When I thaw ground pork, I will make the eggroll bowl or whatever it is called. I have slaw mix, too. I didn't want to put soy anything in it. While at Publix, a woman was refilling the tiny condiments at the deli so I asked her if I could have one of the Boar's Head Horseradish. She said it was stronger than the stuff at Arby's. If I like this, I will buy the jar. This dish should last a few days and be good for freezing for Tommy and me. The two pounds of ground pork and the whole bag of slaw mix will make too much to eat all week.

    I still have chicken to eat that is cooked. It will be put on a salad.

    1. That all sounds so good. We love the egg roll bowl and could eat it every week. Boar's Head is so good. I like to get the Boars Head subs at Publix for a once in a blue moon treat. You'll have to let us know what you think of the horseradish.

  6. For me, it is 15 June, Saturday. DD3 had a group yard sale today at her home. Last night, my other adult kiddos attended a professional baseball game or went to a Paul McCartney concert. Of all things, I recall my younger sister attending a Beatles concert in the US in their early years.

    No menu planning for me except same foods. With very limited diet permitted by physicians, I eat much the same daily.

  7. They say the eating the same diet over and over is excellent for your health. I loved it when I had yard sales at our home in Pikeville.. They were some of the best times.
