I cooked this in the Instapot on Friday with onions. Cooking with onions and celery in the pressure cooker will infuse your chicken with those flavors, which then makes for great tasting chicken salad.
Here is the chicken after cooking. After cooling off a bit, I separated the chicken from the bones and then went to making chicken salad.
Here is one portion of the chicken salad afterwards. There are numerous ways to make chicken salad. I put green olives and cream cheese in mine.
And then on Saturday I made sandwiches with the chicken salad using marked down croissants that I bought at Food City. We took these with us when we went to some yard sales.
I've only made chicken salad with chunks of chicken(not shreddd/minced up like yours). I add mayo, grapes or apple chunks and pecans. I'll have to try it your way now since I LOVE green olives....thanks.
ReplyDeleteYou're welcome, Sluggy. I whizzed mine in the food processor to get it like that. The green olives make it more of a savory dish. You way sounds delicious, I would love the pecans for sure.
DeleteI may try making chicken salad like this. I don't care for mayo so maybe this will help. Thinking of adding some buffalo sauce and celery bits and a shake of ranch dressing mix to it. Thanks for the idea!

DeleteWhen I cook chicken in crock pot, oven, or pressure cooker, I always add celery, onions, and bell pepper for the flavor only. This combination of seasonings is called the holy trinity. I will not eat the bell pepper or celery so I put them in large pieces. That was an excellent price on chicken!
ReplyDeleteThank you, Linda. I thought it was a great price too. My daughter doesn't care for bell peppers or celery either, but I use the celery in dressing for Thanksgiving and I know she likes that. They can add so much flavor.
DeleteI chop the celery small and I can eat it when all wilted...lol. I have had dressing other places with chunks of celery so large that I could not eat it. Dressing would not be dressing without abundant celery.
DeleteI chop mine small too and then saute it in the butter along with some onions. I need to make some now that we've talked about it. LOL

DeleteYes to chicken salad with cream cheese and no mayo. I prefer chicken salad on Pumpernickel bread but am not medically permitted seeds. Also not permitted dairy, but I cheat and then pay for it. I pulse chicken in food processor for salad. However we all can eat healthfully, if we choose.
