This Week in my Frugal Kitchen

No photos this week but this is what we've been up to in our frugal kitchen this week. 

Rather than let them go to waste, I took the bananas that were turning brown and divided them into three freezer containers to have for banana pancakes at a later date. 

Washed the dishes several times per day as usual. This motivates me to want to get into the kitchen and cook.  

Last Sunday I made a large pan of homemade Lasagne. Enough for dinner for three nights and several lunches this week. 

Another night we had Ham, Potato Pancakes, and Mixed Vegetables. I made the Potato Pancakes because we had leftover mashed potatoes. Now I have leftover Potato Pancakes. No worries though as they will be eaten as well. 

Another night I took the leftover meat sauce from the lasagne and made a one pound box of elbow macaroni. 

I mixed the meat sauce with half of the elbow mac for dinner one night. Then I took the rest of the elbow mac and made a pasta salad to have for lunches this week. 

I used up several things from the fridge and pantry in the pasta salad, so no food waste here this week. 

One night we had a free Mystery Shop pizza for dinner. 

One morning I made tomato sandwiches for breakfast and then served those with ice cold watermelon. These summer time foods are so good and delicious. 

On Saturday night I made Macaroni and Cheese for dinner and I added a little bit of the ham that we had left. I've been stretching it into several meals this week.

  1. Yum, what a delicious week! I always say I'm going to make banana pancakes, but our frozen bananas get used up for smoothies before that can happen. One day the pancakes will win! :)

    1. Bananas are so good in a smoothie as they make it taste sweet. I need to make some smoothies as I h ave a lot of fruit on hand today. We love banana pancakes here, they are so good.

  2. I love how you use stuff from one meal in the next, like the potato cakes from the mashed potatoes. I try to do that too. I can't stand to waste food. :) I hope you have a great week.

  3. We're eating tomato sandwiches here, too. Finally! The love apples are from our greenhouse, since we live in Alaska, but man oh man are they good.

    Fresh strawberries, also "finally." Sweet and juicy, with intense flavor. Those long summer days, even when it's cloudy, make really delicious fruit.

    Okay, now I'm hungry.

    1. Glad you are enjoying the good summertime foods too, Donna. We are enjoying cantaloupe and honeydew melons right now. They are so sweet they taste like candy. I love this time of year.

  5. Missing you, Belinda, and need a shot of your saving/stretching. Wasting for me is the same as tossing in the trash bin. I inquired of DH if he'd rather have X or XX. X costs. XX does not cost. Without hesitation, he chose no-cost XX. I did, too, which are free-day opportunities in our metro. Surprised me that he did not choose X, a life-time favorite of his.

    How are your Etsy projects advancing? Are yard sales slowing down?

    1. Thank you, Anna. Good job on your dh selecting the no cost XX. My exdh did not want any part of the Tightwad lifestyle, sadly. Etsy has not worked out like I thought it would, but I have not given up! LOL

      Yard sales have not slowing down any and we are busy as a bee with those. The only thing I bought this week was flannel blankets for sewing projects, so nothing to report much on that front. DD loaded up for reselling though, which is great.

  7. I am reading David McCullough's The Wright Brothers. Follow their example and never give up if Etsy is worth your time. Wilbur and Orville Wright changed the world. We who read need to remind you what a pleasure it is to read your blog.

    DH had to be "broken in" to join my battle to remove all debt and become savers. I had stopped teaching 3 or 4 years before we began the battle, telling DH, "You earn the money, and I won't spend it."

    The window air-conditioner video is a dandy. Keep telling myself its information is transferable, but I am waiting to see how many years it requires me to realize how.

      You and your dh have done a great job with your finances.

      I liked that video on the air conditioner too. I would have done that with ours, but did not want to take it down two flights of stairs to the hose. Ours is still working well and we are so very thankful for it.
