I did manage to find a few things to make for dinner, so grateful for those things I have on hand in cases like this. I forgot about getting a photo, but it tasted good and filled us up and that's what matters.

Mom wanted us to go get Chinese food for dinner, but they were all closed, so we ended up getting Little Caesars pizzas for $5.00.

I also made Butterscotch Scotties using a recipe on the back of a marked down bag of butterscotch chips from Publix.
Friday
Baked Potato Bar
This was very filling and could easily accommodate other ideas like bacon and grilled chicken. The last time I made chili, I put a small bowl aside in the freezer for this purpose.

DeleteI love the idea of a baked potato bar! We had a baked ham on Memorial Day, so this week has seen a lot of ham salad, as well as pierogis with a ham sauce. I also made a slow cooker potato soup with ham. To relieve the monotony, I had a peanut butter sheet cake with chocolate frosting, and a pineapple lemon pie for desserts.

DeleteEverything looks delicious! We ate a variety and I felt like I did a lot of baking. I was craving sweets, but when I would taste them I didn't want to eat them. LOL Everyone else was happy though.

DeleteOn Sunday we pulled three things from the freezer -- home-cooked black beans, leftover chicken and homemade enchilada sauce* -- and made a casserole that usually contains quinoa. Since we're low on quinoa we substituted rice and it was just as good.
ReplyDeleteThat's not the only change we made to the recipe: It calls for green chilis but we didn't have any so we left them out (still good!) and also for a lot of grated cheese (which we always leave out, due both to health reasons and personal preference). I think next time I'll add some corn for color.
*Enchilada sauce is so easy and so CHEAP to make that you'll never want to buy it again. I make a double batch at a time because it calls for three ounces of tomato paste the the average can is six ounces. And speaking of substitution: Once I was making this at someone else's house and she didn't have any flour, so I used cornstarch and it worked.
