Mmmmmm - one of my favorite ways to use leftovers. Love potato pancakes.
ReplyDeleteAgreed, Cheryl. :)
DeleteThis was a leftover favorite growing up. I don't make them now because my family likes reheated mashed just as much. I might give these a go next time.
ReplyDeleteI forget about making them sometimes, Sam.
DeletePotato pancakes and green peas fresh from my mother's garden were a dinner combination we anticipated with fried chicken. Good memories.
ReplyDeleteOh definitely, Anna. Love those memories associated with food. :)
DeleteYum! We love potato cakes. We also make them with leftover bits of meat in them at times or if my son is home, he loves them with cheese added.
ReplyDeleteOh both of those sound good, Shara.
DeleteLove this idea! Thank you for posting. Going to try this. Thanks for all your great ideas.
ReplyDeleteYou're welcome, Beverly. Thank you for visiting!
DeleteI recently made potato pancakes from our leftover potatoes from Christmas Dinner. I just put about 2 cups of mashed potatoes with an egg, salt, pepper and a green onion and fried them as you did. They worked well, and were enjoyed as a frugal breakfast, like yours were! It's a great use for those leftovers:)
ReplyDeleteDefinitely, Becky. :)
DeleteI think i will try these next time i have left over potatoes then freeze them to use with a mixed grill xxx
ReplyDeleteDelicious!!!
