Muffins


I've been wanting to make some muffins lately, but didn't have a 6-cup muffin pan to use in the toaster oven. I do have some silicon baking cups, but muffins tend to stick to the ones we have and we lose half the muffin trying to get them out. 

I do have a 12-cup muffin pan, but that would require the use of the big oven and I don't want to use it because it will heat up the house. Our air conditioner is working hard enough as it is during this heat wave without adding additional heat into the house.  

My daughter surprised me last night when she came home with this. 


She bought it at the Dollar Tree for $1.00 and it fits perfectly in our toaster oven. 

She is definitely a keeper.  :)

The other day I was browsing through the items in the Crash & Burn section at Food City and stumbled across these baking cups. 


They have been on my grocery list and finding them for 45¢ for 90 cups was a bargain in my book. I bought four packs of them, which is definitely cheaper than Pam spray. 


With these added tools in my kitchen I am now able to use up several muffin mixes I have in my pantry without heating up the house.

  1. I always make muffins in the toaster oven. Even using the liners, I still spray the inside of them because somehow the muffins always stick to the paper.

    Enjoy!! I've been dying to make homemade blueberry muffins, the recipe Carol from CT posted, because we always loved Jordan Marsh muffins. I've just been lazy.

    1. Oh my gosh, Mary Lou...that recipe looks so good! I've been wanting to try it too. And I have blueberries in the freezer. I need to do those next.

  3. Belinda, your daughter knows you well. Such a great find. A couple of weeks ago I made lots of raspberry and white choc muffins using the raspberries from our garden. After making lots of jam, I freeze the rest of the berries as we pick them. I haven't had to buy raspberries in three years.

    1. Wendy, your muffins sound so good. And that's great that you have raspberries in your freezer. Jam making and freezing extra raspberries sounds right up my alley. WTG. :)

  6. Funny story about those muffin tins. I was at the Dollar Tree about a year ago and there was 2 teens, I am guessing, a boy and a girl (not sure if they were siblings or dating) and they were looking for disposable muffin tins. They couldn't find any. So the boy picks up the actual muffin tin and says why don't we just buy a couple of these? The girl wasn't so sure. He finally said what is the difference? The disposable ones we were planning to toss anyway and these could be re-used. Worst case scenario, we toss them. She finally agreed that it might work.

  7. I don't like the silicone cupcake things, either. However, I have a lifetime supply of paper liners my mother gave me in 1978!
