WFD Wednesday

Dinner tonight involved using up the last of the Thanksgiving day leftovers.

I used the last of the mashed potatoes and made potato pancakes, which are pretty easy to make. I placed the leftover potatoes in a bowl with an egg, diced onion, salt and pepper and a little flour and mixed that up. I then spooned them into a skillet making patties out of them and pan fried them in vegetable oil until crisp.

I also used up the last of the bacon we had and made BLTs, and I also served the last of the broccoli.

After washing the dinner dishes, I put the rest of the dressing, whipped topping, and two pies in the freezer to be eaten at a later date.

There were three potato pancakes left over after dinner, which will be served with breakfast tomorrow morning. 

Nice to know that we made at least five nights worth of dinners out of our Thanksgiving day leftovers saving a lot of money in the process. :)

  1. Here's a tip you may be able to use: save leftover mashed potatoes in freezer containers that will hold the amount needed for a Sheppard's pie. When it's time to make one, the spuds are already done for you! I also make potatoe patties; adding some shredded cheese or sour cream and scallions/chives make them sooo good.
