Creamy Crockpot Chicken Stuffing and Green Beans

This was what we had for dinner Monday night. I put it in the crockpot in the morning, which switched over to warm after four hours so it was ready for dinner. I served this with mashed potatoes. 

Creamy Crockpot Chicken Stuffing and Green Beans

Ingredients

2 lbs (about 4 chicken breast)
1 (6 oz) box of stuffing mix
1 (10.5 oz) can cream of chicken condensed soup
3/4 cup sour cream
1/3 cup water
10 oz bag frozen green beans
salt and pepper to taste

Directions:

1. Prepare crockpot with cooking spray. Season chicken with salt/pepper and place in the bottom of a crockpot.

2. Next, top chicken with 1 box of stuffing mix.

3. In a separate bowl, mix together condensed soup, sour cream and water. Spread mixture over stuffing.

4. Place green bean on top. Cover and cook on HIGH for 4 hours. If you need a longer cooking time, you can do LOW for 6 hours, but I recommend the high setting

  1. I have never had this version. You put the chicken in raw? I always put green beans in these type casseroles that usually call for peas.

    1. Yes, the chicken is put in raw. I think the green beans work well with this casserole.

  2. This sounds perfect for our family! Of course, I'll have to use plain stuffing croutons with no salt, but I bet that would work fine. Did you leave breasts whole? I'd probably cut up and maybe make as more of a casserole, and think this would be good lake/cabin contribution to our buffet meals.

    1. Sam, I did leave the breasts whole, but you could easily cut them up beforehand too. It's a keeper here. :)

  6. I've made a version of this several times in the oven, same ingredients, but the recipe calls for cooked chicken. I've never thought to do it in the slow cooker with raw chicken. Between the condensed soup and the stuffing mix, the sodium content is a bit high with the recipe I use--leaves my cheeks red, in fact, but man oh man, this is a tasty dish.

    1. I agree Meg, it is tasty. I hadn't thought to do it in the oven. That's a good idea and would be done faster than in the crockpot too.

  8. A good "Get it on the table" recipe when baked in oven. My family also enjoyed Honey Chicken and Rice in oven. No idea where I "stored" that recipe. With a houseful to feed, there was always food aplenty for a quick meal.

  9. My husband really enjoyed this, I will be making it again. He said it was the type of thing that you would go back for at a potluck and hope there was some left-a high compliment! Next time I might mix the soup/water/sour cream with the dressing, rather than layer it. Seems like this would work baked for an hour at 375 degrees too.
