Here is a list of what I planned on making for dinner this past week:
1. Chicken & Dressing

3. Chili Tacos
4. Bean & Cheese Enchiladas, Mexican Rice
5. Meatloaf
6. Baked Potatoes & Broccoli
7. Grilled Chicken
Sides This Week:
1. Pasta Salad
2. Cole Slaw
3. Cucumber Salad
And here is what we actually made this week:
Sunday: We've been craving a chicken pot pie for a while now, but it's so hot, so I brought out the toaster oven and made a small one to satisfy us. The toaster oven uses less energy and gets up the house less, so a win-win.
Monday & Tuesday: On Monday I took out some chicken breasts to thaw and then cooked them in the Instant Pot later. I then made the Chicken & Dressing that I was going to make last week. I served this with homemade mashed potatoes and Italian green beans with onions. There was enough left over to have on Tuesday as well.
Wednesday: Chicken was taken out of the freezer to thaw, so I decided to grill it on the George Foreman grill. I made brown rice and steamed broccoli to go along with this.
Thursday: Hamburgers with the works.
Friday: Homemade pizzas and salad.
Saturday:Tacos with all the sides...lettuce, tomato, cheddar cheese, jalapenos, taco sauce, sour cream. This was my favorite meal of the week.
Thank you, Mary Lou. We do pot pies in the winter more than the summer too. I'm going to make a Ham pot pie this week. It will be my first time making one of thoses, but I think it will be good. I hope you have a good week too. :)
Chicken and dressing and pot pie sounds so yummy! We had a huge pot roast and gravy today, with rice, squash, cucumbers, and tomatoes. We def. have enough roast left over to eat again this week.
Great minds, I had been craving a chicken pot pie within the past couple of weeks and I did buy one and,like you, did it in the toaster oven.
ReplyDeleteI usually do them quite a bit in the winter, but for some reason this past winter it just wasn't on my radar.
We enjoyed it although it was a warmer day, but it still hit the spot.

DeleteLast week we ate: salmon (my husband -it's his favorite), tacos, carnitas, burgers w/coleslaw. I ate everything over a salad.

DeleteI like chicken pot pie but never make it in the summertime. Maybe I would if I had a toaster over though.
ReplyDeleteThat was my big turn off, Anne. Heating up the house, so I drug our toaster oven out of the pantry and we've used it several times since then.
DeleteWe love our tacos, too! One of my dreamed-of appliances is a toaster oven. I don't like turning on the oven in this heat either.
