My Frugal Week

Through several deals this week we now have three whole turkeys and two turkey breasts in our freezer. I went to a community giveaway on Sunday because they were giving away ingredients to make a Thanksgiving meal along with a $25 gift card to Food City. I thought that was pretty neat. 

We ate a lot of chicken this past week as you'll see when you look at our menu. I made soup twice this week and put the remaining soup into individual bowls for the freezer. 

Recipe of the Week

Peanut Butter Banana Bake


This is a recipe from Nourish & Thrive Amy from TikTok. She lost 100 pounds eating this no sugar/no flour recipe for breakfast every day. She makes the recipe into cookies or loaves. There is a photo of the loaf I made this morning below the recipe.


I’m going to be tweaking the recipe to try and lower the calorie content. She uses real peanut butter and I’m going to try it with powdered peanut butter, which is lower in calories. 


This recipe isn’t very sweet since there is no sugar and adding a date or two to the batter may help with that. Of course, if you make sure your bananas are really ripe that will help with the sweetness. The ones I used were brown spotted, but not super ripe. 


Ingredients:


6 ounces ripe banana

1 egg

1 ounce no sugar peanut butter

1 ounce wheat germ

⅛ teaspoon salt

¼ teaspoon baking powder

¼ teaspoon baking soda

1 teaspoon vanilla


Directions:


Mash banana and add egg. 

Mix well.

Add all other ingredients. 

Mix well. 

Spray a small loaf pan to prevent sticking or use parchment paper.

Pour batter into the mini loaf pan.

Bake in a 375 degree oven for 25 to 30 minutes.

Thursday ~ Chicken Burrito Bowls, Salad

Friday ~ Baked Potato  - Bailey was gone to her book club, so I had a simple dinner at home and topped it with cheddar cheese and black olives. 


Saturday ~ Bean & Cheese Enchiladas  - I turned these two gifted to us cans into a Bean & Cheese Enchilada bake for dinner. We had the leftovers for lunch on Sunday.

  1. Thanks for the recipe. I was trying to think of something I could make for my brother since he is a diabetic, and I think he might enjoy the loaf.
    Your meals sound good! I put some pork in the crockpot for BBQ for a few days. We had egg roll in a bowl and a hamburger casserole.

  6. I wonder if I could leave off the wheat germ since I am allergic to wheat?

    1. I’m sure you could, Linda. Amy uses oat germ in her muffins if you can find that. It’s a small amount so I don’t think it will matter if you leave it out. Experiment with it and see, which is what I do. Let us know if you do.
