My Frugal Week
We've been using up what we have here this week and cleaning out what meats we have in the freezer.
What’s for Dinner
Monday ~ Eggroll in a Bowl
Tuesday ~ Chicken and baked sweet potato.
Wednesday ~ Chicken Salad.
Thursday ~ For the 4th of July we had Hamburgers, Corn on the Cob, and Watermelon.
Friday ~ Chicken Fajitas, Sweet Potatoes, and Green Beans with Onions.
Saturday ~ Chicken Fajitas, Corn on the Cob, Steamed Broccoli.
Sunday ~ Marinated Grilled Chicken, Carrots, and a Sunflower Salad Kit from Aldi. I marinated the chicken in Olive Garden's light Italian dressing and it turned out really well.
What’s on the Menu for This Coming Week
I'm definitely planning on BBQ Pork, Salmon Patties, and Chicken this week. Be sure to come back next week to see what sides we serve with these main dishes.

I'm fixing your Hawaiian chicken recipe tonight yum, but no idea for the rest of the week. I should be able to pick beans tomorrow. Now if only the tomatoes would hurry up and ripen. I do love homegrown tomatoes.

Great minds think alike, Kathy, LOL Oh yum, I like the Hawaiian Chicken, I need to make it soon, And yes on the homegrown tomatoes, I don't know of many things that are better than that. My Dad used to grow some good ones!

DeleteYour menu looks really good! We've been eating fajitas as well (trying to use up leftovers). This week is: steak, hot dogs, & carnitas. We'll mix in a bunch of garden goodies, and have caprese salad, lots of fruit. (Hawaii Planner)

DeleteWe had hamburgers, corn on the cob, and watermelon, too! I really need to make some salmon croquettes! We have chicken thawed, so some iteration of meals with that. I need to cook a pound of bacon and find some homegrown tomatoes at the market.

DeleteWe are sticking to my menu this week for a change. Probably because our eldest son will be here very soon and then things could really be up in the air. I have a bit of chicken breast left from our meal on Tuesday so I will be making some Chicken salad for sandwiches tonight (once I go and grab an onion from the garden).
