Menu Plan Monday ~ Saving Money in my Frugal Kitchen

 


What’s for Dinner

Monday ~ Bailey was gone to a rehearsal dinner and I had slept most of the day after my eye injection, so when I did wake up, I just made two small personal sized pizzas and put hers in the fridge until she got home. 

Taco Tuesday ~ This was the wedding day of my niece and they had a Mexican buffet at their wedding. It was the neatest thing. 

Wednesday ~ Over the weekend I put a ten pound bag of chicken leg quarters in the fridge to thaw. On Wednesday they were still frozen some, but I put them in the oven to cook anyway. 

What a difference roasting them in the oven verses making them in the crockpot. The skin was so nice and crispy. 

I made Chicken Tacos for Bailey and I just had a small portion of chicken with Brussel Sprouts and Roasted Potatoes. 

Thursday ~ Baked Fish, Steamed Carrots, Roasted Potatoes. 

Friday ~ Cheese Cocktail Weenies, Dirty Rice, Carrots, and Corn. I just threw together what I could of leftovers and what I had on hand after cleaning downstairs. It worked and fed us well and no ordering take out! 

Saturday ~ Sausage, Broccoli, Carrots, and Field Peas. A delicious meal for under $5 made in the comfort of our own home. 

Sunday ~ Pot Roast, Carrots, Potatoes, and Green Beans with Onions. Can you believe we are actually having a beef roast? It's been a LONG time since I bought one, but this one was on mark down, so I bought it. 

What’s on the Menu for This Coming Week

I haven't decided yet, so I'm going to wing it this week, although I have several ideas floating around in my mind. Please come back next week to see what we had on our menu this week.

  1. We have not had a roast is a long time and I have had a hankering for one. Maybe this week will feature a good buy on one. I doubt it but maybe!
    I think the idea of a Mexican buffet for a reception is a fantastic idea!

    1. The Mexican buffet was so great, and they had queso and chips with drinks waiting on us while they took photos. It worked out so well.

  2. We're having lasagna & chicken yakisoba, with likely leftover pizza. The weather is definitely getting nicer, so we will also probably grill something this weekend. (Hawaii Planner)

  4. Yum, we had beef roast as well on Sunday. Of course on sale and since it was the last one, I will be keeping my eyes open for another great sale. The leftover roast is now residing in my freezer for another meal or two later on.

    I'm sure the Mexican buffet at the wedding was delicious! I love Mexican foods, and now I'm craving some chips and salsa. :)
    My son is getting married in October, and we are trying to figure out what to do for the rehearsal dinner.

    1. Thank you, Kathy. The Mexican food at the wedding was so good. I could eat it everyday. Oh, how neat that your son is getting married this fall. You'll have to let us know what you/they decide on for the rehearsal dinner.
