Menu Plan Monday

Good Monday morning!

We are at the end of the month/groceries from our last monthly shop, so this is the time of the month to get creative.

Here is a list of meals I came up with for this week.

If you’re interested, come back on Friday to read about the side dishes I served with each meal.

Until then, I hope you have a wonderful week.

  1. Definitely checking out the lentil tacos. We are trying for more meatless meals here.

    God bless.

    1. There is another recipe for Lentil taco meat on here with brown rice that is really good too, if you’re interested, Jackie.

    2. Here is the recipe in case you’re interested:

      Taco Style Lentils & Rice
      3/4 cup dry lentils
      3/4 cup brown rice
      4 cups tap water
      4 beef bouillon cubes
      2 teaspoons chili powder
      1/2 teaspoon cumin
      1 teaspoon onion powder
      1/4 teaspoon garlic powder

In a 2-quart saucepan bring the water to a boil. As the water is heating, add the lentils, rice, bouillon, chili powder, cumin, onion powder, and garlic powder. Bring the whole thing to a nice fat boil. Reduce the heat to low. Place a lid on the lentils and allow the mixture to simmer for about 45 to 50 minutes. The water should be mostly absorbed. You may serve this as it, topped with a little cheddar cheese if desired. Or you can use it to fill burritos or tacos instead.

    1. I love them too. October beans are my favorite ones, but I love soup beans too aka great northern beans. Pintos are very popular here where I live, but to me they don’t have the great flavor that some other beans have. The lentil recipe is a tried and true one.
