This week in my Frugal Kitchen

Sunday: Taco Meat made into Nachos


Monday: Sausage, Cajun Soup Beans, Fried Okra, Mexican Cornbread. This was the okra we picked up from our neighbor. 

Tuesday: Cheeseburgers, Green Beans with Onions, Brussel Sprouts

Wednesday: Margherita Pizza - In the south they cut pizza into triangles, but where I grew up, south of Chicago, they cut pizza into squares. So, I cut mine at home into squares too. 

Thursday: Hamburgers

Friday: Hamburgers
          
Saturday: We shopped yard sales most of the day and came home and cleaned out the refrigerator. We had a motley crew of items such as cajun beans, brussel sprouts, green beans, applesauce, tomatoes, bbq,  and chocolate pie. It was great to clean out the fridge and wash and put all those dishes away again. 

Have you tried applesauce with a packet of jello stirred into it? It's very refreshing and might make those who don't care for the applesauce actually like it. 

I tried it with lime jello this week and it was very good. You don't need to use a whole packet of jello either, just enough to flavor it. 

For Sunday breakfast I decided to make banana pancakes and bacon. 


I saw an idea on Youtube recently where they wanted to duplicate the McDonald's McGriddle. 



I decided to use one of these containers with the point at the tip. The idea is to add some drops of syrup into the pancake batter while it's cooking.  



They didn't taste exactly like a McGriddle, but I do like the idea. Of course I turned my syrup bottle upside down to be able to get all the goodness out of the bottle. 


I made the bacon on the griddle as the pancakes were cooking too. Here is one of the finished plates. 


I haven't bought any paper towels since April, but I have been saving any napkins we receive and any extras or extra plasticware I keep in this plastic shoebox. I then used some of these napkins to drain the bacon this morning. 


That's what was on the menu in our home this week. I feel like we ate too many hamburgers this week, but I was tired after working all day and they were easy to make. I'll try to do better this week.

    Neat idea of adding Jello to applesauce. I will try that.

  2. For years I made jello using applesauce in place of the cold water. Kids, now in their late 30s & early 40s loved it. Using less hot water made it easy to cut into shapes for special occasions - red jello bells at Christmas, lemon jello stars for 4th of July, orange jello pumpkins for Halloween, etc. For the McGriddles I wonder if they use maple flavoring? Since I eat a plant based diet for health reasons my meals consisted of mainly salads with lots of home grown sprous or baked sweet potatoes with a cruciferous vegetable with broccoli my favorite and roasted cauliflower my 2nd.

    1. Your jello cut into shapes sounds fun for the holidays, Bellen. I had a classmate back in elementary school whose mother would bring jello jigglers to each class party and they were a big hit.

      Could be maple flavoring in those McGriddles. I would like to know, so I could duplicate them at home. I'll have to try the maple flavoring and see how that does. that's a great idea, thank you.

      Your meals sound delicious. A plant based diet is the way to go for good health!

  3. Okay, I have can of applesauce and lots of small sizes of Jello. AND, I am in need of a treat. How much Jello should I put in a can of applesauce. Will it jel or just be a thick applesauce? Thanks.

    1. It won't thicken it but flavor it instead. I would only try half a package and see how that works. I used a whole one and that was too much.

  4. I have never had a McGriddle, ever. So, I have no expectations...lol. This week, due to all the pain from the accident, I have eaten nothing very nutritious!

  5. Everything sounds delicious. I still didn't make fried okra and your post reminded me again I should do it while I have okra. :)

    I tried a new dish this week - chicken tagine in slow cooker.

  6. Sorry you are so tired. We do what we must at overly-tired times. No one starved, and you managed. None of us has achieved Wonder Woman status yet.

    Our menus the past week were the same-old/same-old except DH ate like royalty with our dentist's gift of veggies.

  7. I just realized that we had zucchini in every meal I made this week! My mom had brought up two baseball bat-sized zucchini a few weeks ago, and I've been diligently trying not to let a single bite go to waste. I still have probably half of a quarter of one zucchini left, but that zucchini has gone into stir fry, soup, and pasta dishes this week, as well as shredded up for zucchini pancakes. My son loves those!

    You and I have a lot in common! I'm an Illinois girl myself (grew up in Grundy county; live in the western suburbs now), but we lived in Tennessee for five years, the bulk of it in Sumner County. :) When I make pizza at home, I cook it on a cookie sheet and slice it into squares as well, because that's how my mom always did it. :)

      How neat that you are from Illinois too! We are definitely kindred spirits. My brother still lives in Naperville. Square pizza tastes better. LOL
