Monday Night Dinner


Dinner Monday tonight was the 15 Bean Cajun Soup, which I started the beans soaking for on Sunday. I served cornbread along side this soup. I still have some left today for dinner.

Breakfast on Monday was peanut butter on toast, while lunch was egg salad sandwiches. I've already made lunches for Tuesday, peanut butter and jelly sandwiches. Breakfast will be the last of the egg salad on sandwiches. 

All this food was made at or from home and we've spent no money outside the house for carryout or fast food. Eating all of our meals from home is one of the best ways we save money.

  1. I love bean soup. I'm not sure if it is because I grew up in the rural South and beans were served a lot or if it is just because they are so good...lol...but it doesn't matter. The fact is I love them!

    I didn't make egg salad this week, but I did actually send a bag of hard boiled eggs with hubby to work. He likes the portability of them and I like that he's adding a little protein in as he's rushing out the door. (I also added some to his lunch salads.)

    1. My daughter loves boiled eggs too, Shara. They are so good and portable. A good source of protein for sure.

      We all love beans here. I'm glad they are so inexpensive. :)
