WFD Saturday ~ Tina's Potato Soup



Dinner on Saturday night was a tried and true family favorite, which comes from my sister, Tina's Potato Soup. We started by cutting up all of our vegetables, and then the rest of the recipe is pretty quick to put together. 

This can be a very frugal recipe if you leave out the Velveeta cheese and it does taste good without the cheese. The bay leaves give a good flavor to the soup.

Here is the recipe
:

Tina's Potato Soup

Ingredients:

½ cup butter
2 medium onions, chopped fine
4 chicken bouillon cubes
6 cups water
6 cups potato, diced
6 diced carrots
2 teaspoons salt
½ teaspoon pepper
2 teaspoons celery salt
4 tablespoons flour
1 ⅓ cup evaporated milk
2 bay leaves
Velveeta Cheese

Directions:

Melt butter, add onions, and sauté.
Dissolve bouillon cubes in 3 cups water and add to butter and onions.
Add potatoes, carrots, salt, pepper, celery salt, and bay leaf.
Simmer until tender.
Stir in evaporated milk.
Blend ⅔-cup water with flour and stir into soup to thicken.
Add Velveeta cheese to taste

This was the perfect dinner after our day of yard sales yesterday and we still have plenty left today for lunch.

  1. My dd and I love potato soup. My dh not so much so I don't make it too often. Sounds like a perfect dinner after a busy day.

    We went to a firefighters basketball game. They played the Harlem Superstars (think Harlem Globetrotters type of team). Then there was a Chinese buffet at a local restaurant for invited guests. So I didn't have to cook last night. A bonus for sure.

  3. Potato soup is so good. Today we're having beans, cornbread and fried potatoes. I'm making a big pot of beans so we'll be eating beans for a few meals. I'll also freeze some small containers to have with tacos later. We also have shaved ham so lots of easy meals of sandwiches. I'm hoping to get a couple roast on sale to make into jerky for gifts this week. I've learned to let the butcher slice it - so much easier! I finally got chunk cheese on sale for cheese balls. The recipe I use calls for ranch dressing mix. I used the store brand instead of name brand. Everyone loved it so that saved over $1.25 a package. You got some really great deals on sausage. I'm amazed sausage hasn't skyrocketed in price like ground beef.

    We had our family Christmas dinner and gift exchange early. I was stumped what to get teen grand-daughter. I had a few gifts for her but to even out the cost of her sisters gifts I needed something else. I had a big mug/bowl with a stuffed animal inside that I'd gotten 1/2 price after Christmas last year. I stuffed the mug with loose bills and sat the stuffed animal on top. She loved it!

    1. Sky, your dinner sounds delicious! Nothing like a good home cooked meal like that. Oh, the jerky sounds wonderful and makes the nicest gifts. My exdh didn't like jerky until he tried my homemade jerky and he was converted. LOL That is a great idea to let the butcher slice it for you. Oh, I love what you did for your teen aged granddaughter. That is so great that she loved it!
