Menu Plan Monday ~ Saving Money in my Frugal Kitchen ~ Fourth & Final Week of July 2026

Welcome to Frugal Workshop where every Monday I share the simple strategies used to save money in my kitchen over the past week, along with the meals that made it to our dinner table. You'll find practical tips on how we saved money on food hopefully to inspire your own meal planning using the foods you have in your own pantry.


My Frugal Week

Last Monday I peeled and chopped one of the white cucumbers from the Mennonites and stored in a wide mouth mason jar to add to salads and cottage cheese throughout the week. 

Having produce cut up and ready to go ensures we use it up, which ensures less food waste. Also, storing fresh fruits and vegetables in mason jars helps them last longer than plastic storage containers.  

We are definitely getting in our fruits and vegetables in each day. Last Monday I had blueberries, watermelon, apple, orange, carrots, brussel sprouts and a vegetable based soup at lunchtime. 


On Saturday evening Bailey and I went to People Helping People and picked up free vegetables including yellow squash, tomatoes, assorted colored bell peppers, and cucumbers. We also picked up several melons earlier in the day. 


On Sunday I chopped up the red onions and bell peppers and stored them in glass jars to be used in meals this week. I cut up the cantaloupes and one watermelon and disposed of all the garden waste in the compost pile. 


Afterwards I made cucumber tomato salad and a bean salad to have with meals this week. It was so easy to make those with all the vegetables already prepped. 

What’s for Dinner

Monday ~ Grilled Chicken, Bean Salad, and Baby Carrots. 

Tuesday ~ Chicken Breast Filets, And Watermelon. 

Wednesday ~ Blackened Chicken, Bean Salad, and Steamed Broccoli. 

Thursday ~ Beefy Baked Beans, and Steamed Broccoli. 

Friday ~ Fajita Grilled Chicken, and Steamed Broccoli. 

Saturday ~ Beefy Baked Beans, Carrots, and Broccoli. 

Sunday ~ Adobo Chicken Thighs, Cucumber Tomato Salad, and Bean Salad.

  1. Wow, the produce is gorgeous. What a blessing! And I love that you are being such a good steward. It is easy to get overwhelmed when so much is coming in at once. I'm dealing with that now myself.

  2. Dear Belinda, the vegetables look fantastic! I have always loved many vegetables! Red, yellow and orange peppers, potatoes, carrots, beets, asparagus, zucchini, tomatoes...the list goes on! Yes, cucumbers! I am picky with tomatoes. They must be nice and red...and ripe and juicy enough! My favourites are the vine tomatoes, Savoura type and the cherry and grape tomatoes. I am not very keen on the Italian tomatoes, they just don't have the juicy traits that the above-mentioned tomatoes have.

  3. Your vegetable pictures are beautiful! My kids pediatrician would always tell me to let them eat the rainbow, and I see the rainbow in your vegetables. Can't get any healthier than that. Your meals sound delicious. Have a great week.

  4. I can't figure out what is going on with Blogger. Sometimes your posts appear right when you post them, and then, like today it appears a day late.
    I need to start doing what you did and prep my vegetables in advance. Yours are beautiful!
    Once again we are overrun with tomatoes. The resident groundhog eats everything else but for some reason he does not care for tomatoes or bell peppers. I am not mad about that!

  5. I agree with Anne - something is going on with blogger. I often have to check blogs that I know post regularly - because nothing new shows up on side bar. The new is there, just not on the side bar. Frustrating.
    Lucky you and all that fresh and wonderful produce. Summer is such a great time to get our color in!!!!! Your meals sound great and using up all the wonderful freshness.
