
My Frugal Week
I had a lot of cauliflower on hand this week and made some into cauliflower rice and stored it in the freezer for a future meal.
I added my vegetable and fruit peelings to my compost pile in the woods.
I bought a red pepper plant from Home Depot to go with my free tomato plants.
I also bought dill, catnip, and spearmint.
We have a lot of apples on hand and I learned this week in Dr. Michael Greger’s latest video, that the highest antioxidant apple is the Granny Smith apple, which has more than twice the antioxidants than a golden delicious apple. ๐
Apples are the perfect portable food and very good for us. I brought one with me in my bag while shopping the yard sales and ate it when I started to get hungry. It filled me up and kept me satisfied until dinner.
On Sunday I deep cleaned in my kitchen even pulling out the refrigerator and vacuuming in the motor area and mopping the floor underneath. I declutterred a lot while I was in there and made a few changes to make things easier to reach.
Recipe of the Week
This is a basic stir fry sauce, without any fancy ingredients, that I use regularly in my frugal kitchen in order to serve as the sauce for vegetables we have on hand. It’s a great way to use up any vegetables that were either leftover or need to be used soon.
Basic Stir Fry Sauce
Ingredients:
1 cup soy sauce
1 cup water
2 spoonfuls of corn starch
3 tablespoons brown sugar (can omit)
2 tablespoons rice vinegar (can omit)
2 tablespoons ginger
Directions:
Use cold water, so the corn starch will dissolve.
Stir everything together until mixed well.
Once your vegetables are cooked to your desired doneness, pour sauce over them.
Stir sauce until it heats through and becomes thick.
Enjoy!

Monday ~ Smoked Sausage, Roasted Cauliflower & Brussel Sprouts, Carrots, and Corn on the Cob.
Movie Night Tuesday ~ Homemade Pizzas and Salad.
Wednesday, Thursday & Friday ~ Turkey Stir Fry, and Roasted Brussel Sprouts. I made a basic stir fry sauce with water and soy sauce, ginger, and corn starch. I used sugar snap peas, snow peas, onion, yellow squash, cabbage, and red pepper.
Saturday ~ Chicken Tacos, and your choice of Flour or Corn Tortillas, Red Onion, Extra Sharp Cheddar Cheese, Tomatoes, Black Olives, Corn, Jalapeรฑos, Chipotle Sauce, and Salsa Verde.
Sunday ~ Hamburgers, Sweet Potato Fries, and Cabbage with Onions.

I have a lot of cauliflower I need to process also. I am thinking of making and freezing the cauliflower fake mashed potatoes to have on hand as pull out for a quick side dish.

DeleteI remember having tacos and sloppy joes made from ground chicken we got for .75 a pound. Also a Domino's Pizza that was 6.99 for a large two topping. Today I have my menus ready for this week and made a big bowl of coleslaw to go with meals.
ReplyDeleteHubby and I are not fond of Granny Smith apples but perhaps our favorite right now is Cosmic Crisp. We picked some nice ones at Ingles last week for 1.28 a pound .
What a great price on the chicken, Lana. Yum on pizza, it’s one of my favorites, that and tacos. ๐ I’m going to make some coleslaw this week too. I like that it goes with so many different meals. Granny Smith apples are tart. I use to like them more than I do now, but I will eat them. The cosmic crisp are good too and the honey crisp too.
