Menu Plan Monday ~ April 15, 2024

What’s for Dinner

Monday ~ Grilled Chicken, Lettuce , Tomato and Corn Salad.

Tuesday ~ Minestrone Soup

Wednesday ~ Pulled Pork, Honey Carrots, Corn, and Lord Chesterfield Beans.

Thursday ~ Orange Chicken from Trader Joes, Broccoli, and Oven Roasted Potatoes.

Friday ~ Chinese food... I had Shrimp, Crab Rangoon, Broccoli, and Pineapple. Bailey had her favorite Cajun Chicken and Coconut Shrimp.

Saturday ~ A concoction I created using canned beef, canned potatoes, onions, corn, and some cheese. It was a big hit and I had three servings left for lunches this week. It used up some canned goods from the pantry and fed us inexpensively. A win-win in my book.

Sunday ~ Salisbury Steaks, Mashed Potatoes, and Green Beans with Onions.

What’s been on the menu in your home this past week?

  1. I just listed a bunch of possibles. I think tonight or tomorrow will be hamburgers. I've been wanting one. We've got spinach greens to use so maybe a big salad, though that wasn't in my list- just noticed the date. That could go in a crockpot mick lasagna dish too. Don't you like when you have a win with an on the fly meal?

    1. Yes, I love when I have a win on a fly meal. A hamburger does sound good to me too. I'm making tacos for dinner tonight though, so tacos it will be.

  2. I sadly finished off the huge bag of kale. One night, that was all I had. We have had mostly bscb, two burger nights, salad. Of course, most of this seemed to be leftovers. Tommy is very aware of food in refrigerator and imaginative when he goes to look for what is there for dinner.

  3. We had one of those go, go, go weeks and way too many grab fast food because we are starving weeks. This week it is eat at home and recover week although we did just have salads a couple of times. Have a good one!

  5. Concoctions are always fun. One never really knows how they will turn out. Most times they are delicious.

    God bless.
