Thank you all for your sympathies, sweet comments, and love when my Dad passed away last week. It was such a shock to me as he was very active and still driving at 81 years old. I had no idea when I took him to the hospital that day that he wouldn't come home.
What was for Dinner
Monday ~ Came home from the hospital and peeled some carrots and potatoes, cooked those, made green beans with onions, and heated up an already cooked Pork Roast we bought on clearance. It worked and we didn’t get take out.
Tuesday ~ Knowing I would spend the day at the hospital with Dad, I made tuna salad before I left for the hospital. Bailey had her usual movie night BBQ Chicken Pizza while I had tuna salad with celery sticks.
Wednesday ~ This is the night my Dad passed away, we held his hand until the very end. I already had Chicken cooking in the Instant Pot, so when we got home there was Chicken Tacos with Lettuce, Cheese, Tomatoes, and Onions, but I didn't really have an appetite.
Thursday ~ Same as Wednesday.
Friday ~ Same as Wednesday.
Saturday & Sunday ~ We had taco flavored chicken for three days, so what was left was divided into individual containers and frozen for another day. Dinner was then Chicken & Dressing Casserole with green beans and onions.

I haven't decided yet, so I'm going to wing it again this week.

DeleteFunny thing, Dad had some gift cards that he kept telling me he had but hadn't used. We were getting items out of his home this week and there were three gift cards for Olive Garden, Red Lobster, and Cracker Barrel, all with balances of $25, Bailey said he was still taking care of us.
