Belinda's Homemade Potato Salad

Listed below is my own recipe for potato salad. I made a batch of this yesterday before we went to Sweetwater to pick up our hamburger. We came home and I made hamburgers and served it with this potato salad.

Belinda's Homemade Potato Salad

Ingredients:

6 medium white potatoes  ~ Skin On, Quartered
1/2  red onion, diced
4 hard boiled eggs peeled
1 & 1/2 cups mayonnaise
1/2 cup sour cream
1/4 cup dill pickle relish
1/4 cup sweet pickle relish
2 tablespoons white vinegar
1 tablespoon mustard
1 teaspoon dill
1 & 1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Paprika for Garnish

Directions:

Cover potatoes with water in a saucepan &  bring to a boil over medium-high heat.
Reduce heat to low and simmer until potatoes are tender, about 10 minutes. 
Drain and cool slightly.
Combine mayo, sour cream,  relishes, mustard, vinegar, dill, salt & pepper in a large bowl. Add potatoes, onion and eggs and toss gently. 
Sprinkle with paprika. Serve chilled or at room temperature.

  1. Looks like a good recipe.
    I have never gotten the whole boiled eggs in tater salad thing....I guess because I just made it like my mama did. lol My recipe is equal parts mustard to mayo, now I use my homemade pepper relish instead of pickle relish and no vinegar. I may have to try red onion since my gastric system can't handle much Spanish(white/yellow)onion now. And maybe I'll attempt w/sour cream(and cut down the amount of mayo in it's place).

    1. You're welcome, Sluggy. My daughter loves eggs, so I put them in for her. I would leave them out if it were just me. The red onion makes for a nice change. The sour cream makes for a nice change too. :)

  2. Sluggy, my son thinks eggs in potato salad are an abomination. My grandmother always thinly sliced them & arranged them on top of salad, so those who like them can include them, and those who don't can skip.

  4. I'll admit, I never made potato salad. I am a firm believer in deli's, LOL this looks really god-I love when others make homemade potato salad.

    I don’t use sour cream when making potato salad. I’m going to buy a small container of sour cream next time when I’m at the store, to your recipe. 😊

  7. I love potato salad! And, I love eggs and mustard in it. I usually put diced celery and diced onions in it. I just bought sour cream, so I may try that, too.
