My Frugal Kitchen ~ What We Ate This Week



Monday


Pigs in a Blanket
Pasta Salad
Mixed Vegetables
Steamed Broccoli
Radishes
Orange



This time of year finds me pulling from our pantry and using things we have on hand more than any other time of year due to our lower income this time of year. 

On Monday I used pie crusts I had on hand to make pigs in a blanket. And I always seem to have stuff on hand to make pasta salad, so that was on the menu as well.  


Tuesday



Cube Steaks & Gravy
Broccoli, Cauliflower & Carrots
Mixed Vegetables (from Monday)
Radishes
Garden Salad


Tuesday after dinner I made some more pickled beets to have with dinners the rest of the week. 





Wednesday & Thursday

BBQ Chicken Sandwiches
 Carrots & Potatoes
Corn
Pickled Beets

There were three chicken breasts in the package  I thawed, so that made plenty of BBQ for at least two days and some to freeze for later. 


Friday & Saturday


Tacos
Beef, Potatoes, Tortillas
Lettuce, Tomatoes, 
Onions & Cheese

I add diced cooked potatoes to my taco meat to 
s-t-r-e-t-c-h it out as much as possible.

  1. Nice variety in your meals. I just bought some cube steaks and was going to make them today, but I think I will wait until a rainy day and have them then. They are a nice change once in a while.

    It's been so hot here so we have been doing very simple meals in the house. It's even been too hot to use the grill. We have cooled down this weekend, but back to the heat Monday and Tuesday, but, hopefully, no humidity this go around.

    1. I agree, Mary Lou, that cube steaks are a nice change once in a while. It's been a long time since we had them. I hope it does cool down for you all, it's been hot and humid here too. I'm ready for some cool weather.

  2. Everything looks so good. Last week was all about deep cleaning the home and putting the rest of our garden in. Family Drama Spring-No More Family Drama Summer, lol. It was so chaotic and a massive catch up time I did buy one dinner out for the week. It was frugal too. I was "Summer" cleaning the kitchen and knew adding dishes would be a lot of dishwasher runs.

    Sun- Chicken Taco's with big salad trimmings. Grapes
    Mon- Pizza (Carry-Out) Pizza is super cheap here because it's a college town. You can buy gourmet pizzas for $5.
    Tues- Leftover Pizza
    Wed- Turkey Smokies, Corn on the Cob & Big Salad
    Thur- Egg Noodles & Meat Sauce. A big green pepper salad.
    Sat- Crockpot Chili
    Sun- Chili Fries from leftover Chili (rare treat for DH & I) and a big salad.

    I do have dinner out on Friday's. I had a lovely Mexican Dinner. This is when DH & I run all our errands. We love simple pleasures so this is our little date nights.

  3. Everything sounds delicious, Safyne Anais. I would be eating those gourmet pizza for $5 too. I love pizza, but my daughter doesn't like them as much as I do, so we don't have them as often as I would like to have them. LOL Glad you are having a drama family free summer. YOu can relax and enjoy your summer. :)

  4. Sounds like a delicious week Belinda. I have been stretching and stretching as much as possible with our meals also. And pulling from the pantry which is such a good feeling.

    1. Thank you, MamaHen. It is definitely a good feeling to pull items from your pantry and use them up. And I love saving the money that comes with that as well from not having to buy more ingredients to make meals.
